Stuffed Cheesy Bread, Domino’s Style. But with this recipe, we go with a cheese blend of mozzarella, provolone, cheddar, and Parmigiano oven-baked right into the bread and topped with our garlic sauce before being served. There are different sauces that can be used and all kinds of pizza toppings that can be stuffed into the bread. There are also four main dipping sauces that can be served alongside for a full-on eating experience. This is a recipe you can decide to make whenever you make the overnight pizza dough. Portioning out 454 g, or 1 pound, of dough for any kind of stuffed cheesy bread you desire. Stuff it with pepperoni, olives, bacon, jalapenos, or any other combinations of pizza toppings. 1 lb of pizza dough makes 2 stuffed cheesy breads.
Ingredients for Stuffed Cheesy Bread
Overnight pizza dough (1x454g pizza dough), Cornmeal, Cheese (Mozzarella, Cheddar, and Parmigiano or a blend of Parmesan, Asiago, and Romano), and Garlic Sauce.
Dipping Sauce: Pizza Sauce, Donair Sauce, Garlic Sauce, and Twisty Bread Sauce.
Stuffed Cheesy Bread Dough
It all starts with pizza dough at 1 lb, or 454 g in weight. This is flattened out and squared up (rectangle) in cornmeal just like you would with twisty bread, but much thinner so you get a really long pizza dough that is about 20 to 24 inches long and about 10 to 12 inches wide. Dust the top part of the dough with a bit of flour so that it is not sticky when handling.
This is sliced in half so that two stuffed cheesy breads can be made from one 12-inch pizza dough. This creates a thinner layer of dough that will be stuffed with cheese and toppings, should you choose to add, and folded over to top with sauce and more cheese.
Cheesy Bread Sauce
The cheesy bread sauce is any sauce you want to brush the dough or drizzle over the top before serving. Typically this is garlic sauce but can include any of the dipping sauces or even other sauces. My go-to is garlic sauce or garlic butter, or the Twisty Bread Sauce made by combining the garlic sauce with pesto in equal amounts. You could also go with just pizza sauce or save that for dipping.
Cheesy Bread Cheese
The cheese blend we use for this recipe is a 3:1 mozzarella to provolone cheese blend or just mozzarella cheese with added cheddar cheese. Along with Parmigiano or a Parmesan cheese blend of Parmesan, Asiago, and Romano cheese.
The cheese blend can include other cheeses like Monterey Jack or Jalapeño cheese.
The cheese is used to stuff the dough before folding over. As well as more cheese on top.
Pizza Shake
Additionally, you can throw together a pizza shake to garnish the cheesy bread with. Just combine the below and sprinkle some on top of the cheesy bread after it has come out of the oven.
- Three-cheese blend of Parmesan, Asiago, and Romano. About 3 Tbl.
- Onion Seeds. About 1/2 tsp.
- Aleppo. Anywhere from 1/2 tsp to 1 tsp. You can also use red chili flakes.
- Parsley. Anywhere from 1/2 tsp or more.
- Butter Popcorn Seasoning, about 1/2 tsp.
- A bit of Goya Adobo Seasoning, or the homemade Goya Adobo seasoning, can be added for salt and garlic if desired.

Pizza Toppings
While the stuffed cheesy bread is just that, pizza dough and cheese with sauce. You can include a variety of pizza toppings, like the jalapeno and bacon or just pepperoni.
Jalapeno & Bacon Stuffed Cheesy Bread
Bacon bits are made by chopping up bacon into small bits and cooking over medium heat. The jalapeno can be freshly chopped jalapenos or pickled jalapenos.

Pepperoni Stuffed Cheesy Bread
Stuff the desired amount of pepperoni on the cheesy bread dough for a pepperoni stuffed cheesy bread.

Garlic Pesto Stuffed Cheesy Bread
Instead of garlic sauce or garlic butter, brush the dough with twisty sauce and top with cheese. Bake in the oven for 7 minutes and top with garlic sauce and optionally garnish.

How to Make Stuffed Cheesy Bread
Stretch out 454 g of pizza dough into a rectangular shape on a cornmeal-dusted surface. About 10-12 inches wide and 20 to 24 inches long. Slice the dough in half to create two stuffed cheesy bread doughs. Place one of the pieces on a foil or parchment sheet on top of a pizza screen or pan to start assembling.

Brush on garlic sauce or sauce of choice and add a handful of cheese. Fold over the dough and press the edges. Optionally brush the top dough again with sauce and slice into strips. Add another handful of cheese on top.
Once fully assembled, place it into a preheated oven; the max it will go to cook for 7 minutes. Flip it around about halfway through. Once it comes out of the oven, top with a drizzle of brushing of sauce and garnish if desired.

You can choose not to use a sheet of foil or parchment paper, but the bottom will cook up darker, and the sheet helps to contain the mess for any sauce or cheese. If not using a sheet of foil or parchment paper, use a pizza pan, not a screen, to prevent anything from dripping into the oven and burning up.
Stuffed Cheesy Bread Dipping Sauce
I got four sauces for these stuffed cheesy breads, and these are the garlic sauce you would have already made up for the sauce to go over the top of the cheesy bread once coming out of the oven. The other is the garlic sauce with pesto sauce mixed in equal amounts (twisty sauce). The final two are pizza sauce and donair sauce.
Ingredients
- 454 g Overnight Pizza Dough
- As Needed Cornmeal
- As Needed Flour - for dusting the dough to prevent sticking
- 1 portion Special Garlic Sauce - See notes for other sauces
- 4 Handfuls Mozzarella Cheese - or 3:1 shredded Mozzarella to Provolone cheese blend
- 2 Handful Cheddar Cheese - shredded, optional
- As Desired Parmigiano - Or Parmesan cheese blend of Parmesan, Asiago and Romano cheese
Instructions
- Formation: Preheat the oven to the highest setting it will go with the rack in the middle position. Usually about 500F to 550F. Place the dough on a cornmeal-dusted surface. Use a bit of flour on top to prevent sticking. Form the dough as a hand-tossed pizza, but without forming a crust. Stretch the dough out to create a rectangular dough about 20 to 24 inches long and 10 to 12 inches wide. Then slice the dough in half for two pieces.
- Stuffing: Transfer one of the pieces to a sheet of parchment paper or foil on top of a pizza tray. Brush with garlic sauce and top with a good handful of cheese. You can also opt to add pizza toppings here before topping with cheese.
- Fold & Slice: Fold the dough over and press the edges to seal. Flatten it out with your palm. Optionally brush on more garlic sauce. Slice the cheesy bread in half and then slice each half in half again and repeat until you have all of them sliced pretty much evenly.Add another handful of cheese on top.
- Bake: Place into the oven to bake for 7 minutes. About halfway through, rotate the pizza pan around for even browning.
- Garnishing: Drizzle sauce over the top and optionally garnish with Parsley, Aleppo, Parmigiano, or a blend of Parmesan, Asiago, and Romano cheese or a pizza shake and serve. Repeat for the other dough.
