JAHZKITCHEN Greek Pork Souvlaki Platter

The Souvlaki Platter brings together various Greek dishes. Such as Greek souvlaki skewers of either chicken, pork, beef, mutton, or lamb marinated in a Greek feta marinade. Served with Greek lemon rice, Greek salad & Tzatziki. Optionally with Greek pita bread and hummus. Ingredients for a Souvlaki Platter

Choice of meat (chicken, pork, beef, mutton, or lamb); Greek Feta Marinade (Ladolemono & feta Cheese Brine, plus choice of seasoning); Greek Lemon Rice (Rice, Ladolemono, Onion, Garlic, Chicken Bouillon, Lemon Pepper, Lemon Juice, Parsley, Dill); Greek Salad (Roma Tomatoes, Green Bell Pepper (or other color), Cucumber, Onion, Feta Cheese, Dressing (Ladolemono, Red Wine Vinegar, Sugar, Oregano)), Tzatziki (Greek Yogurt, Cucumber, Sea Salt, Garlic, Red Wine Vinegar, White Vinegar, Lemon Juice, Olive Oil, Parsley, Dill, White Pepper).

Optional: Greek Pita Bread and Hummus.

Ladolemono

The ladolemono is the very first thing that is made up. Because it is shared across the Greek feta marinade, Greek lemon rice, and Greek salad.

  • 1-12 Cloves Garlic: Depending on how much garlic you want and how the ladolemono will be used
  • 1/2 C Lemon Juice
  • 1/2 C Extra Virgin Olive Oil: Can use Sunflower Oil
  • 1/2 Tbl Dijon Mustard: Optional, good for when using as a marinade, especially with Lamb or Pork
  • 1/2 tsp Sea Salt & Lemon Pepper: Each, or to taste
  • 1/2 Tbl Oregano: or more
  1. Toss in all the ingredients, except the oregano and lemon pepper, into a glass jar with a mouth opening large enough to fit the immersion blender.
  2. Press the immersion blender to the bottom and blend. Then move up and down with the blender to emulsify all the oil and to ensure all the garlic is blended. Add the oregano and lemon pepper to mix through. Done! Cover and refrigerate.

Souvlaki

See the souvlaki recipe to start making this and marinate it in the fridge. Meanwhile, all your other dishes can be prepared while the meat is marinating. Go with your choice of meat using chicken, pork, beef, mutton, or lamb. As well as the seasoning you may want to include.

For chicken souvlaki, these can be cooked for a short time at a high heat, about 15 minutes. If using pork or other meats, it’s better to slow cook until they are tender and then at high heat to char a bit. The souvlaki recipe describes the different cooking methods, as well as everything else you need to make these beautiful souvlakia or souvlakis.

Greek Salad

Prepare the Greek Salad recipe and cover this before refrigerating to let the flavors meld. If you’re serving this on the side, then chop your vegetables a bit chunkier. On the other hand, if you plan on serving it with the option of making a souvlaki wrap with Greek pita bread or steamed pita bread. Then small dice the vegetables so they can be used as a topping, or just use diced onions & tomatoes for toppings with a Greek salad on the side.

Soak the feta cheese in water after removing the feta cheese brine to make the Greek feta marinade. This reduces the salt in the feta cheese and improves texture. Dice and add the feta cheese after it has soaked and right before serving to toss gently into the salad.

Tzatziki

The Tzatziki recipe needs to be made up in advance for the flavors to blend fully. Or if it’s already previously made, you’re all set to use some here. Any leftover tzatziki can be frozen and used later for another souvlaki platter, souvlaki wraps, and gyros.

Greek Lemon Rice

Lastly, the Greek Lemon Rice is prepared. The rice takes about 35 minutes to be done, so time this with cooking your souvlaki. If you’re cooking your souvlaki rather quickly, like in about 15 minutes, then start the rice first. On the other hand, if you are slow cooking the souvlaki and then charring it, start the rice when about 35 minutes of cook time remain for the souvlaki. The goal is to have both the souvlaki and rice done at about the same time.

The Greek lemon rice can be exchanged for fries, hashbrowns, Greek potatoes, or roasted vegetables.

Optionally add other things to fill out the souvlaki platter even more. Such as Greek onions & peppers. Which are made with sautéed onions and peppers in ladolemono with Goya adobo seasoning or the homemade version of it. Add Greek pita bread, and hummus.

  • Preparation: The souvlaki platter is a combination of various recipes that are pulled together to create the main dish. Prepare everything in the following order.
    Ladolemono: Click the Ladolemono link in the recipe ingredients above and prepare. This is prepared first because it is shared across the various dishes.
    Souvlaki: Click the link in the recipe ingredients above to prepare the Greek feta marinade with choice seasoning and dice the meat to marinate. Empty out the feta cheese brine to make the Greek feta marinade and fill the container back up with water to soak the feta cheese. which reduces the salt and improves texture.
    Greek Salad: Next, prepare the Greek salad and dressing and toss well, cover, and refrigerate. When you cook the souvlaki and rice, dice the feta cheese soaked in water and gently toss the salad.
    Tzatziki: Finally, click the link for the tzatziki recipe and prepare.
  • Souvlaki & Greek Lemon Rice: Prepare and cook the Greek Lemon Rice, if your souvlaki will be cooked up in about 15 minutes. Otherwise if you are slow-cooking the souvlaki and then charring it, start the souvlaki first, followed by the rice when about 35 minutes of cook time remain.
  • Plating: Plate the souvlaki and Greek lemon rice. Use Parsley & Aleppo to garnish the souvlaki and an optional lemon wedge on the side to squeeze over the meat. Then add the desired amount of Greek salad and tzatziki before serving.
    You can serve it with other sides such as Greek pita bread and hummus.
