Introducing the JFC Butterfly Shrimp! Tender Crispy Butterfly Shrimp marinated in Popeyes style marinade then served up Crispy in our Frickin Good JFC Breading. Serve it up with some Fries and Dipping Sauce to turn this into a JFC Shrimp Platter.

Shrimp
Pick up deveined medium to jumbo size raw shrimp, about 1 lbs. worth. Place the frozen Shrimp into a bowl with cold water for 10 minutes until they are thawed. Peel the shells off, leaving the Tail still attached or not, is a matter of preference.
Butterfly Shrimp
Butterfly Shrimp is simply the backside that has been cut a bit deeper, but not all the way through. Usually used when deep-frying shrimp to create a bit more surface area for the coating and with a quick and even cook time. The Shrimp can also be butterflied from the belly.
Technically, just the shrimp that has been deveined is butterflied, just not as deep. The “Butterfly” Shrimp is more of a marketing term for battered and deep-fried shrimp, as is the case for Popeyes Butterfly Shrimp.
While completely optional, you can slice the shrimp a bit deeper to get a more butterflied shrimp, although it isn’t necessary.
Popeyes Style Marinade
I’ve experimented with a bunch of Popeyes Style Marinades before this one became my favorite. This one does a really nice job at creating those iconic crevices.
The only change to the marinade for Fried Chicken versus for Seafood is to add Hondashi instead of the Maggi Chicken Bouillon Cube and a bit of sugar. Everything else is identical.
Butterfly Shrimp Marinade
- 1/2 C JAH Poly Flour
- 1/2 C Cornstarch & Water
- 1 Egg
- 1 Tbl White Vinegar
- 1 tsp Hondashi
- 1/2 tsp Sea Salt, MSG & Sugar
JFC Breaded Shrimp
The breading used is JFC Breading, typically used to create Fried Chicken. This is just crazy good with Shrimp and Fish too for a JFC Fried Fish.
JFC Butterfly Shrimp
Straight from the marinade, toss them gently in the JFC Breading and straight to the fryer.
Deep Frying JFC Butterfly Shrimp
Deep Frying Shrimp only takes about 2–3 minutes, or longer for the Jumbo Shrimp. With the JFC Breading, you want to get good color, so the deep frying temp is set to 350 F. The same you would do for Wings, Popcorn chicken, or smaller cuts of meats.
Once you have the shrimp battered. Place them into the Deep Fryer Basket and lower them all at once into the oil. Give the basket a shake to ensure none of the shrimp get stuck together as the batter forms.
They will continue to cook as they rest from the residual heat.
JFC Butterfly Shrimp Dipping Sauce
Our favorite is Sweet Thai Chili Sauce, which you can buy in bottles at your local supermarket. Used as a dip, standalone, or mixed with Mayo.
Sweet Thai Chili Sauce
Very good by itself or mixed with Mayonnaise.
Add to a small bowl 2 Tbl of Mayonnaise with 1 Tbl of Sweet Thai Chili Sauce or a little more or less.
Mayo & Sriracha
Add Sriracha Sauce to some Mayo as desired for a dipping sauce.
Garlic Sauce
This is a Papa John’s style Garlic Sauce and is very good to add a garlicky kick to the Shrimp.
Garlic Sauce
- 1/4 C Butter
- 1/4 C Sun Flower Oil
- 1 1/4 tsp Garlic Powder
- 1/2 tsp Butter Popcorn Seasoning
- Pinch Citric Acid (about 1/4 of 1/8 tsp, very small amount)
Seafood Mayonnaise
Seafood Mayo is an easy and quick Mayo used with various seafood items, including right here with JFC Butterfly Shrimp.
Since the Marinade, as well as the breading, contains salt, you will want to reduce the salt (Butter Popcorn Seasoning) by half in this recipe when serving with Butterfly Shrimp. This reduction is already made in the below ingredient listing.
Seafood Mayo
- 1/4 C Hellmann’s Mayonnaise
- 3/4 tsp Lemon Juice
- 1/4 tsp Hondashi
- 1/4 tsp Sriracha
- 1/4 tsp Garlic Powder
- 1/4 tsp Aleppo Chili Flakes
- 1/8 tsp Butter Popcorn Seasoning
French Fries
Deep fry some Fries up to make this a Shrimp Platter. I usually just use the store-bought French Fries. However, if you have time, then the Homemade French Fries are exceptionally Good & Crispy.
Optionally Season the Fries with Cajun/Creole Seasoning. With a side of Spicy Ketchup. Just combine Sriracha Sauce with Ketchup to your liking.

- 1 Deep Fryer
- 1 Marinating Bowl
- 1 Breading Bowl
Ingredients
- 1 lb Shrimp - Medium to Jumbo Size
- 1 C JFC Breading - or more if needed
Butterfly Shrimp Marinade
- 1/2 C JAH Poly Flour
- 1/2 C Cornstarch & Water
- 1 Egg
- 1 Tbl White Vinegar
- 1 tsp Hondashi
- 1/2 tsp Sea Salt, MSG & Sugar
Instructions
- Place the Shrimp in a Bowl of Water and thaw completely. This will take about 10 minutes. Peel the Shrimp, leaving the Tail on or not. Place the Shells into a Ziploc bag and freeze for other recipes.
- Combine the Marinade ingredients and marinate the shrimp on the counter while the deep fryer is preheated to 350 F.
- Place JFC Breading into another bowl and add the Shrimp in two batches. Gently toss about 20 times.
- Place the Shrimp into the Deep Fryer Basket and lower into the Oil. Give the basket a shake so that the Shrimp don't stick together. Deep Fry the Shrimp for 2–3 minutes, or longer for Jumbo Shrimp. Set aside and repeat for the second batch.
