JAH Frickin Good Chicken Process
Clean and Prep Chicken
Cut, Trim the fat, and Clean the chicken, making sure you remove the organ meat from the thighs bone area and dislocate the joint in the thigh. Save the trimmings for Crackling Gravy. To see more on how to prepare chicken click here.
Cutting the chicken into 8 pieces will result in 2 large chicken breasts, which is not ideal for deep-fried chicken. They are simply too large. For Fried Chicken, break it down to a minimum of 9 pieces and upwards to 12 pieces. I prefer 11 – 12 pieces.
JAH Frickin Good Chicken Pre Seasoning
Use about 1/4 tsp of Kosher Salt per piece of chicken or 1 Tbl of Kosher salt for a Whole Chicken. Toss well and refrigerate for an hour or longer. Afterward, wash the chicken well to get rid of excess salt before dipping it into the egg wash.
Optionally you can Brine the Chicken. Which depending on the Brine you won’t have to wash and rinse the chicken afterward. Either way is fine.
The important thing is that the chicken itself is seasoned. The Breading will seal the seasoning in, adding more flavor to the chicken itself.
JFC Marinated Chicken
Optionally use the below to marinate the chicken.
- 1/2 C Water
- 1 Chicken Maggi Bouillon Cube dissolved in the water above
- 1/2 tsp Sea Salt & MSG
The Chicken gets marinated in the above for about 1 hour and straight to breading in JFC Breading before being deep-fried.
Use 1 Egg & 3 Tbl water or milk.
Optionally you can just dip the chicken in water prior to breading.
I usually add 3/4 C – 1 Cup of the breading to do anywhere from 9 -12 pieces. With about 1/3 C left for Gravy.
- Place however much flour you plan to use into a bowl for the amount of chicken you are making.
- Press the breading onto the chicken that was dipped in egg wash. Shake off excess breading.
- Set the Chicken aside for about 5 minutes.
The breading that is leftover after coating the chicken can be used for Gravy.
Start with 3/4 C of Breading for a whole Chicken. Adding more Breading as needed is preferable since the leftover breading will need to be used up right away for gravy or discarded.
JAH Frickin Good Chicken Cook Times
Deep fry at 325 F. The 325 F mark is crucial for proper cook time and color.
Cook times vary. The general rule is a few minutes after it floats. A good time frame is 15-18 minutes for bone-in chicken pieces.
Allow the Chicken to rest a few minutes and Serve.
Optionally place chicken into a preheated oven at 200 F for about 20 minutes or longer to keep warm and serve when ready. This also softens the skin. ENJOY!
Leftover JFC Breading for Gravy
Save the trimmings from the Whole Chicken and render the fat out for the gravy. Check my post out for information on Rendering Fat.
