3 on 3 Pizza Combo Ingredients
Overnight Pizza Dough, Choice of Pizza Sauce (depending on Pizza), Choice of 3 Toppings (per pizza, depending on type of Pizza), Pizzeria Cheese Blend (Saputo Mozzarella & Provolone Cheese).

Pizza Dough
The Pizza Dough used here is the Overnight Pizza Dough. Which yields about, 1500g of Pizza Dough and will walk you through on how to make it and prepare it for assembly.
For the 3 on 3 Pizza Combo, each medium pizza is 454g per portion. This can be stretched to 500g for a thinner large Pizza. Either way, this recipe can accommodate the 3 Medium Pizza with 3 Toppings or 3 Large Pizzas with 3 toppings.
Sprinkle a bit of flour over the dough if it is too sticky to handle.

3 Medium Pizzas with 3 Toppings
The 3 Medium Pizzas with 3 toppings Combo portions out the 1500g of Pizza Dough into 3 × 454g sizes. This results in your standard size 12 inch pizza. You could portion these out at about 350g for thinner medium pizzas and use the leftover dough to make either Garlic Fingers or Twisty Bread.
3 Large Pizzas with 3 Toppings
The 3 Large Pizzas with 3 toppings Combo portions out the 1500g of Pizza Dough into 3 × 500g sizes. It results in a thinner, but larger pizzas.
Pizza Sauce
Most Pizzas will use the Standard or Classic Pizza sauce, and we have a few to choose from below. Other specialty Pizzas will require a different sauce, that will need to be made up in advance.
Pizzeria Cheese
Saputo’s Mozzarella Cheese is the best pizzeria style cheese you can get. Even better is the 3:1 combination of Shredded Saputo’s Mozzarella Cheese & Shredded Provolone Cheese.
Use a food processor to quickly shred the Saputo’s Mozzarella Cheese and place into a freezer bag. Do the same for Provolone and place into a separate Freezer Bag. Then in a third freezer bag combine 3 C of Mozzarella & 1 C Provolone and mix well. All three of these bags can go into the freezer and used directly when assembling the pizzas.
In some cases a small amount of shredded Cheddar Cheese is desired and this can be shredded by itself and placed on the pizza during assembly. This can include other cheese like Parmigiano or Asiago Cheese, although these are better off sprinkled on after the pizza comes out of the oven.

Hand-Tossed Pizza
When the pizzas are ready, place them on a heavily cornmealed surface, then shape and hand-toss them to the desired size. Sprinkle a bit of flour on top if the dough feels too sticky to handle.
Work with one at a time and keep the dough covered while you prepare and assemble each pizza.

Cheeseburger Pizza
This Cheeseburger Pizza is sauced with the Quick Tomato Sauce and topped with Ground Beef, Bacon, and Onions, with some Cheddar Cheese.

Chicken Ranch Pizza
This Chicken Ranch Pizza is sauced with Ranch Dressing and topped with Marinated Chicken Pieces, Bacon, and Onions. Optionally add in Tomatoes, Peppers, Spinach, or Mushrooms. This type of Pizza is also good with a small amount of Cheddar Cheese.
Additionally, you can sauce with Garlic Sauce before you add the Ranch Dressing for added flavor. Use the Garlic Sauce as a dip for your pizza crust.

Italian Deli Pizza
This Italian Deli Pizza is sauced with Passata Pizza sauce and topped with various Italian Deli meats. You can pick up the trio of Italian Deli meats such as Prosciutto, Coppa Di Parma, and Genoa Salami.

413 Pizza Cook Method
The 413 Pizza Cook Method is by far the best method for cooking pizza with a home oven. Start by preheating the oven with one rack position at the very bottom with a pizzas stone. Place the other oven rack in middle position and preheat to the highest setting, your oven will go. While you prepare everything else and your dough is rested on the counter.
Pizza Shake
There are all kinds of things or combination to make a Pizza Shake to garnish your Pizza. Some ideas are below.
- Cheese: Parmigiano Reggiano, Asiago, Romano
- Chili Flakes: Red Chili Flakes, Aleppo, or Gochugaru
- Herbs & Spices: Basil, Parsley, Oregano, Marjoram, Onion seeds (excellent with cheese), Onion and/or Garlic Powder, Goya Adobo seasoning.
Pizza Dipping Sauces
While there are plenty of Dip options for pizzas, my trio is Pizza Sauce, Donair Sauce, Garlic Sauce.

Equipment
- 1 Large Bowl or Pot
- 1 Digital Scale
- 1 Pizza Screen
- 1 Pizza Stone
- 1 Dough Scraper
- 1 Large Baking Sheet Big enough to place 3 dough balls with space to expand without touching each other
Ingredients
- 1 portion Overnight Pizza Dough - Started the day before
- As Needed Cornmeal
- Choice of Sauce - Depending on pizza being made
- Choice of Toppings - Depending on pizza being made
- As Needed Mozzarella Cheese Blend - 3:1 Mozza to Provolone
Instructions
- Pizza Dough: Prepare the Pizza Dough the day before and at the same time you plan on cooking the pizzas the next day. About 2 hours before you plan on cooking the Pizzas, portion them out into the desired dough size, cover and let proof again.
- Preheat the Oven: During the last hour of proofing, position one oven rack in the bottom position with a pizza stone, and set the other oven rack to the middle position. Let it preheat for an hour.
- Pizza Combos: Decide which Sauces & Toppings you want for your 3 Pizzas and prepare the Sauces, Toppings, and Cheese. Set these aside until ready to assemble the pizzas one at a time. Keep the dough covered as you make your pizzas.
- PIE/413 Pizza Cook Method: 4 Minute Cook: Prepare the Pizza Dough and transfer to a Pizza Screen or Pan. Assemble the Pizza and transfer to the oven to cook for precisely 4 minutes in the middle rack position.1 Adjustment: At the 4-minute mark (3 minutes of cook time remaining), immediately place the oven on broil. Remove the Pizza from the Screen or Pan to come in direct contact with the pizza stone on the bottom rack position. Flip it around so that the front is now facing the back.3 Minute Broil: Broil for 3 minutes. Immediately take the oven off of Broil and back on to the highest setting. Then transfer the Pizza back to the Pizza Screen or Pan and remove. Slice the pizza and set aside or serve. Repeat for each Pizza.
