Mini Skillet Baked Eggs come out so perfectly round and are great when you are looking for a perfect presentation. Served as part of a breakfast plate or to top off seared meat for steak & eggs or pork chops & eggs. They are also used to make the incredibly delicious sunburst sandwiches. Just grease the mini skillets up, crack an egg in, and season. Place them into a preheated oven at 325°F and bake for about 5 minutes.
Mini Skillet Baked Eggs Ingredients
Eggs, Fat (Bacon Grease, Butter, Lard, or Oil), Egg Salt, or Salt & Pepper Blend.
Eggs
Use good quality, grass-fed, large free-range eggs for superior taste. The store-bought eggs just don’t compare. There really is a big difference in taste. Each mini cast-iron skillet takes 1 large egg, and you can repeat cracking an egg in and seasoning to bake.

Salt & Pepper Blend
Combine the salt & pepper blend ingredients together and use to season the eggs.
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Egg Seasoning
You can season the eggs with many different types of seasoning for a wide variety of flavors. However, at the base of it is always going to be salt & pepper, and for that, I use the basic salt & pepper blend. Which includes a bit of white pepper.
Other seasonings that can be used are butter popcorn seasoning & black salt to really drive the buttery taste and emphasize a stronger egg flavor with black salt. If adding these into the salt & pepper blend, drop the salt down a bit. This is a seasoning blend I am still trying to figure out to create the best-tasting eggs. But both butter popcorn seasoning and black salt do work wonderfully with eggs.

Garnish the eggs with greenery (parsley, tarragon, cilantro, oregano, chives, or green onions) and something red (Aleppo, chili flakes, paprika, or chili powder).
Mini Cast Iron Skillets
When perfectly round sunny-side-up eggs are desired, use the small cast-iron skillets. The shallowness of the cast-iron skillet lets the heat reach the top of the eggs to set the whites. It allows you to create the perfectly round shape, and the gentle heat sets the egg whites while leaving the egg yolks completely runny.
These are great not only for the eggs but also to leave on the stovetop to set your utensils on when cooking or placing crackling in when rendering out animal fats and skin.

How to bake eggs in a mini cast iron skillet
Grease the skillets and crack an egg in. Season the eggs and place them into a preheated oven at 325°F for 5 minutes or a bit longer for cloudy eggs or a firmer yolk. Use a small spatula to get under the yolk or the thickest part of the eggs and remove them from the skillet. Don’t let the eggs sit in the skillet for too long or else they become more difficult to remove. Remove while still hot.
Steak & Eggs
These mini skillet eggs can also be used for steak & eggs and yield perfectly round sunny-side-up eggs using either chicken or duck eggs.

Pork Chops & Eggs
Use them the same for seared pork chops & eggs. Pictured below is the pork chop topped with these mini skillet sunny-side-up eggs.

Sunburst Sandwich
The Sunburst sandwich is a sunny-side-up egg sandwiched between buttered toast. It’s a messy breakfast sandwich where you sop up the dripping egg yolk. Not just for breakfast either, it makes for an excellent light lunch or evening snack. Add to it whatever you like. From fried bologna, deli meats, bacon, or breakfast sausages.

BET Breakfast
The BET Breakfast with Bacon Eggs & Toast is a beautiful, simple breakfast too. Where the toast is used to sop up the runny egg yolks. The eggs are baked in the mini cast iron skillets pictured below.

BEST Breakfast
The BEST breakfast is the same as your BET breakfast with the addition of sausages or fried Spam. It’s this combo that can be eaten as a breakfast platter or assembled as a breakfast sandwich that really makes this the BEST breakfast.
