A Sunburst Sandwich or a fried egg sandwich, is two pieces of buttered toast topped with a sunny-side-up egg with a golden, runny egg yolk that bursts, creating a delicious egg sandwich soaked in egg yolk. Add to it various meats and/or cheeses. Different types of bread can also be used too. No matter how the sunny-side eggs are cooked, whether sunny-side up, over easy, fried, baked in the oven, or even poached. It’s that warm egg yolk that bursts inside the sandwich that we’re after. Dripping all over the plate to be scraped back up while eating this breakfast sandwich. It’s so good and simple for breakfast, lunch, or a late-night snack.
Sunburst Sandwich Ingredients
Bread, Butter, Eggs, Sea Salt Blend (Sea Salt, Black Pepper, White Pepper).
Bread
Any type of bread can be used, including specialty breads like sourdough, and may include English muffins, which are good with poached eggs. You can also butter the bread and sprinkle Parmesan cheese and press it into the bread before toasting it in a pan as below for Parmesan toast.

If using the Rudolph’s brand of bread or something similar, then only 1 slice is needed to make a sandwich, because these are large, wide slices. Slice them in half and toast to make one sandwich.
Eggs
Free-range eggs are going to taste a lot better than store-bought. Try to source them from a local supplier. Duck eggs can also be used and contain a much larger yolk.
Sunny Side-Up Eggs
Use a skillet to make the classic Sunny Side Up Eggs while you toast the bread. Another option is to make mini cast-iron skillet eggs that will yield perfectly circular baked eggs with a runny yolk in about 5 minutes at 325°F. It fills out the toast quite nicely.
Either way you do it, ensure you have whites that are fully set and a nice golden, runny yolk, then transfer the egg to the toasted bread.

Stovetop Sunny Side Up Eggs
Place the skillet on medium heat with fat and let it warm for about 3 minutes.
Add eggs & seasoning. Shut the heat off and cover with a lid.
Leave the pan on the burner for a few minutes until the egg whites are firm. About 3 minutes.

Mini Cast-Iron Baked Eggs
Cast iron mini skillet large enough to fit an egg at the perfect size to cover the toast. Bake in a preheated oven at 325°F for about 5 minutes.

Egg Seasoning
Just the standard or basic salt & pepper blend is good to season the eggs. Although, I do experiment with other ingredients that do well with eggs. Such as Butter Popcorn Seasoning, which is impressive in delivering extra butter taste. Black salt really ups that eggy (sulfur) taste. A very small amount of chili powder is nice too. Use parsley & Aleppo for garnishing and color contrast.

Salt & Pepper Blend
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper

Deli Meats
Various deli meats, breakfast sausages, fried hot dogs, bacon, or bologna can be added to build the sandwich up.
Fried Hot Dog Sunburst Sandwich
Split the hot dogs in half and fry them up in a pan over medium heat with a bit of fat.

Fried Bologna Sunburst Sandwich
One sunny-side-up egg and a slice of bologna, or double up on both with two sunny-side-up eggs with two slices of fried bologna for a double-fried bologna sunburst sandwich.

Bacon Sunburst Sandwich
Bacon & sheet pan eggs with some ketchup, for those who like ketchup with their eggs. When cooking up the bacon, use the leftover bacon grease for cooking the eggs.

Cheese
Cheese Whiz, various cheese spreads, or sliced or shredded cheese can also be added.
No matter how you build it. One or two eggs, sunny side up or over easy, and whatever seasoning you use, with any meats or cheese. Plate and slice the sandwich in half to burst the egg yolk. Enjoy while sopping up that warm runny yolk for a delicious Sunburst sandwich!
