Pizza Soup is such a delightful soup with any Pizza Toppings desired and a Mozzarella Cheese Blend on top, much like a French Onion Soup. Serve with Garlic Fingers and Donair Sauce or other sides.

This is a dish you will be coming back to time and time again. It’s just so damn good!

You could also serve this in a Garlic Butter Brushed Bread Bowl.

Pizza Soup Base

The Soup Base consist of

  • 4 Cups of Pizza Sauce
  • 1 Cup of Tomato Juice & Water
  • 3 Cups Chicken Broth.

Or if you want a Broth-based soup. Switch the Amount of Pizza Sauce with broth. So 4 Cups of Broth and 3 Cups of Pizza Sauce. Whatever you’re in the mood for. Even the Broth can be exchanged for Beef or Pork.

Everything combined into a bowl along with the seasoning.

For the Pizza Sauce use JAH Base Pizza Sauce.

Pizza Sauce

JAH Quick Tomato Sauce can be used as the Pizza Sauce too. This contains beef broth, which can be exchanged for Chicken or Pork. For a vegetarian sauce that contains no Animal Broths, exchange for Vegetable Broth.

It also contains the Ketchup component, so additional ketchup may not be required in the recipe, as well as being seasoned already.

Broth

For the Chicken Broth, I use Maggi Chicken Bouillon. Powdered Broths can be used as well.

You can also just buy canned or boxed broth already made up, but I find these really pricey and not as good.

Powdered or Bouillon Broth will save you so much more money, and you can control the weakness or strength of it by adding less or more.

Pizza Soup Seasoning

Add Italian Seasoning or Herbs & Spices commonly associated with Pizza Sauce, like Basil, Oregano, Marjoram, Thyme. Then adjust the Salt & Black Pepper.

The Butter Popcorn seasoning adds some of the salt component as well as a Buttery Flavor that I really enjoy in soups.

Additionally, you can use various Pizza Shakes to flavor the sauce or sprinkle on top as a Garnish.

Pizza Toppings Ingredients

This is where the Soup can take on many different flavors, just as there are many types of Pizzas.

If there are uncooked meats such as Bacon, Ground Beef, or Italian Sausage. Cook this until done. Then add in the Oil and Garlic along with any Vegetables to cook a few minutes before adding in the Liquids and seasoning.

Meat lovers

Add Pepperoni, Italian Sausage, Ground Beef, Salami, Ham, Bacon.

Vegetarian

For the Vegetarian, Swap out the Chicken Stock with Vegetable Stock.

Add Tomatoes, Onions, Green Peppers, Mushrooms, Olives, and Banana Peppers.

Canadian Classic

Bacon, Mushrooms & Pepperoni.

Deluxe

Pepperoni, Italian Sausage, Green Peppers, Mushrooms, and Onions.

The Works

Pepperoni, Onions, Green Peppers, Mushrooms, Ground Beef or Italian Sausage, Bacon with or without Olives.

Italian Sausage and Peppers

Italian Sausage, Green Peppers, Red Peppers and Onions.

Pepperoni Lover

Only Pepperoni. I highly recommend a very good quality pepperoni. Add them in whole, chopped in half, quarters, diced, or strips.

Chicken

Diced Grilled Chicken or Marinated Grill Chicken using the same marinade in the Grilled Chicken Recipe.

To this add a variety of toppings such as Peppers & Mushrooms.

Buffalo Chicken

Add the Marinated Cooked Chicken above with Mixed Peppers & Bacon. Omit adding in the Red Wine Vinegar and add in Buffalo Sauce to taste.

Steak and Peppers

Add thinly sliced Steak Strips with Onions & Peppers. Include Cheddar Cheese in the Cheese Blend.

Pizza Soup Add Ins

Pasta

Pasta for me takes the place of the Pizza Dough and is always included in this soup for us. Up to you whether you want to include it or not.

Add about 100 g of any short pasta desired into the Soup after it has simmered for 10 minutes, cover with a lid and remove from the heat. Let Sit for 20 minutes.

Garlic Croutons

Garlic Croutons can be added as well. Just scoop out the Soup into serving bowls and top with the Croutons & Cheese.

Romaine Lettuce

This is something that I really like with Pizza Soup and Donair Soup. The leaves wilt up but the stem still has that crunch. It is completely optional whether you add it or not, but for me is a nice addition.

Chop Romaine lettuce and placed it at the bottom of the serving bowl. Place the hot Pizza Soup on top with Cheese.

My go-to Cheese blend is Saputo’s Mozzarella Cheese and Shredded Provolone Cheese at a ratio of 3:1.

To this, Swiss & Gruyere Cheese can be added, much like the classic French onion soup. Cheddar Cheese, Mozzarella Cheese Slice, Parmesan & Romano can be used as well.

Scoop the soup out into serving bowls and Top with the Cheese Mixture. The residual heat from the soup should be adequate to melt the cheese in a few minutes. You could also cover the bowl to assist in melting the cheese.

If however, you want that broiled look. Place under the broiler for a few seconds until good colorization before serving, or use a torch to cook the cheese a bit.

Pizza Soup Sides

By Far my favorite is either Garlic Fingers infused with Bacon Grease or Twisty Bread with Donair Sauce or Garlic Bread. A Salad or Wings are very nice to have on the side too.

Pizza Soup

Pizza Soup with your choice of Fillings/Toppings, topped off with a Mozzarella Cheese Blend and served with a Side of your choice.

Equipment

  • 1 Sauce Pot

Ingredients

  • Pizza Toppings of your choice
  • 100 g Short Pasta - Optional
  • Mozzarella Cheese Blend
  • 1/4 C Olive Oil
  • 5 cloves Garlic

Soup Base

  • 4 C JAH Base Pizza Sauce -
  • 1 C Tomato Juice & Water
  • 3 C Chicken Broth - Pork, Beef or Vegetable Stock can be used too

Seasoning

  • 1 Tbl Ketchup & Italian Seasoning
  • 1 tsp Sugar, Butter Popcorn Seasoning, & Red Wine Vinegar
  • Salt & Black Pepper to taste

Instructions

  • Combine the Soup Base with the Seasoning into a bowl and set aside. Prep your Veggies and set aside if using.
  • In a Sauce Pot over Medium Heat, add any Meats that need to be cooked. Cook until done. Add in oil and chopped Garlic along with any Vegetables and cook a few minutes.
  • Add in the Liquids and Seasoning and bring to boil. Reduce heat and simmer 10 minutes. If adding Pasta, add to the pot after the 10 minutes of simmering and mix. Cover and remove from heat and let sit 20 minutes.
  • Adjust the seasoning and scoop into serving bowls, top with Cheese.
    Romaine Lettuce can be added to the serving bowl before placing the soup in, or Garlic Croutons after placing the Soup in. Then Top with Cheese and Serve.

Notes

For a slightly more Brothy type soup. Exchange the amounts of Pizza sauce to Broth. Use 4 Cups of Broth and 3 Cups of Pizza Sauce.
