A Sunburst Sandwich or a fried egg sandwich, is two pieces of buttered toast topped with a sunny-side-up egg with a golden, runny egg yolk that bursts, creating a delicious egg sandwich soaked in egg yolk. Add to it various meats and/or cheeses. Different types of bread can also be used too. No matter how the sunny-side eggs are cooked, whether sunny-side up, over easy, fried, baked in the oven, or even poached. It's that warm egg yolk that bursts inside the sandwich that we're after. Dripping all over the plate to be scraped back up while eating this breakfast sandwich. It's so good and simple for breakfast, lunch, or a late-night snack.

Until the whites have just set and there is no clouding over of the egg yolks.Stovetop: Heat a pan up over medium heat with butter. Wait until the butter starts to foam and crack eggs in. Cover with a lid and shut the heat off to leave it be for 3 minutes.
Buttered Toast: Meanwhile, toast the bread and butter. Place on a plate to await the eggs. Add additional ingredients if desired, like various deli meats and cheeses. Place the sunny-side-up eggs on the toast. Slice in half and serve right away.
Notes
You can also opt for poached eggs, which are really good on toasted English muffins. Or over-easy eggs, where you just fry the eggs over medium heat in fat until set and gently flip over. Either way, it's that warm, runny egg yolk we're after.
