A wonderful Smoked Chicken & Ham Ovensub topped with hickory smoked chicken, smoked honey ham, and bologna with melted Swiss cheese and crispy bacon. Topped with cold and crisp onions, lettuce, and tomatoes seasoned with salt & pepper and pepper zing mayo slathered on. These are oven toasted for about 5 minutes, then topped with the cold ingredients. Serve them right away or wrap in foil or waxed paper for holding. This recipe makes three footlong ovensubs or six 6-inch subs.
Ingredients for Smoked Chicken & Ham Ovensub
Sub Buns, Butter, Hickory Smoked Chicken Deli meat, Smoked Honey Ham Deli meat, Bologna, Swiss Cheese, Bacon, Pepper Zing Mayo (Hellmann’s Mayonnaise, Lemon Juice, Salt & Pepper), Onions, Lettuce, and Tomatoes.
Ovensub Vegetables
With Ovensubs, it is the contrast between the heated ovensub with warm meat and melted cheese in contrast to the very cold crisp vegetables. Your standard across the board for Ovensubs is lettuce, onions, and tomatoes. Chilies or peppers can be added for heat.
- Lettuce: Slice into thin strips, however thin or wide, tear, or chop into small squares.
- Onions: Slice with a mandoline at 1/32 thickness, very thin.
- Tomatoes: Slice with a mandoline at 1/16th thickness or thicker.
Wash each vegetable well and place it on a tray to refrigerate and keep it cold to really boost that contrast between hot & cold.

Hickory Smoked Chicken Deli Meat
The 175 g of Maple Leaf Natural selections of Hickory Smoked Chicken Breast will contain about 15 slices.

Smoked Honey Ham
The 175 g package of PC (president’s choice) Smoked Honey Ham will contain about 9 slices.

Bologna
Slice the Schneiders Classic Bologna slices in half to fill out the ovensub. You only need about 3-4 half-slices of bologna for each sub.

Ovensub Sauce
For this one we are going with the pepper zing mayo. The Pepper Zing mayo is a small portion, so we double it for the ovensubs.
There are other ovensubs sauces that can be used too. Such as Dijonnaise, Deli Mayo, or even just plain mayo and/or mustard.
How to toast Ovensubs
Slice the sub bun in half and butter both sides. On the bottom side add all your warm ingredients, like your meat and cheese. Leave the other side just buttered, but we want both toasted. So place them on a baking sheet and into a preheated oven at 400°F to 450°F in the middle rack position or a notch higher. Toast for 5 minutes. This should be enough to toast the buns, warm the meat, and just melt the cheese.
After it comes out of the oven, you can then start adding all the cold ingredients to the other toasted bun.
Slice the buns in half and butter both sides with butter, mayonnaise, or both.

Add sliced Bologna halves. About 3-4 is good.

Add smoked honey ham slices. 3 slices per sub.

Finish the deli meats with hickory smoked chicken breast. 5 slices per sub.

Top with Swiss cheese sliced in half from corner to corner. Other cheese can be used here too or you can add more cheese.

Optionally add some precooked crispy bacon! These are now ready to go into the oven for about 5 minutes to toast up.

Ovensub Cold Toppings
Once the Ovensubs have been toasted, they’re ready for the sauce and cold vegetable toppings. Start by slathering the pepper zing mayo on the other toasted top sub bun.

Add the desired amount of thinly sliced onions.

Follow with crisp shredded or chopped lettuce.

And place tomato slices on top. Optionally with a bit of salt & pepper to season the tomatoes. Fold over and slice in half to serve right away or wrap in tinfoil or waxed paper to hold.

Ovensub serving size
The 12-inch ovensubs are quite hearty and are good all by themselves as dinner or with a side of chips. To stretch things out, serve them in 6-inch portion sizes along with sides like fries, hashbrowns, salads or soup for a decent-sized dinner. Any ovensubs not consumed can be wrapped and refrigerated for lunch or a snack.

- As Desired Butter
- 5-6 Slices Bologna - sliced in half
- 175g Pack Smoked Honey Ham
- 175g Pack Hickory Smoked Chicken Breast
- 6 Slices Swiss Cheese - sliced in half corner to corner
- 6 Strips Bacon - Optional
- 2 portions Pepper Zing Mayo - or other sauce
- 1 Small Onion - sliced 1/32 thin with a mandoline
- As Desired Lettuce - Chopped or shredded
- 1 Large Tomato - sliced 1/16 thin with a mandoline
- As Desired Salt & Pepper
Pepper Zing Mayo
- 1/2 C Hellmann's Mayonnaise
- 1 tsp Lemon Juice
- 1/4 tsp Salt & Pepper Blend below
Salt & Pepper Blend
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Instructions
- Preparation: Preheat the oven to 400°F to 450°F with the rack in the middle position or slightly higher. Prepare your cold vegetables and place them on a tray to refrigerate. Prepare the salt & pepper blend, then the pepper zing mayo, and set it aside until needed.
- Ovensub Hot Ingredients: Slice the sub buns in half and place them on a baking sheet. Butter the buns and top the bottom buns with bologna, ham, chicken, Swiss cheese, and optionally bacon. Place into the oven for 4-5 minutes until toasted and the cheese is just melted.
- Ovensub Cold Ingredients: Spread Pepper Zing mayo on the top buns and top with the desired amount of onions, lettuce, and tomatoes. Optionally season the tomato slices with the salt and pepper blend. Flip the top sub bun over the bottom bun. Slice in half and serve right away or wrap in foil or waxed paper for holding.
