A Bacon & Swiss Burger is a quarter-pound beef patty on a butter and toasted bun, topped with Swiss cheese, crispy bacon, and Dijonnaise. Add any additional toppings you see fit, including caramelized onions and seared mushrooms or some hot sauce for a bit of heat.
Ingredients for Bacon & Swiss Burger
Ground Beef Patties (Ground Beef, Baking Powder, Beef Powder, MSG), Hamburger Buns or Kaiser Buns, Butter, Swiss Cheese, Bacon, and Dijonnaise (Mayo and Dijon Mustard).
Burger Patties
You can use store-bought ground beef patties. I prefer to make them from scratch using the below burger mixin. Once these are weighed out at 114 g, or a quarter pound, and shaped. They are placed on a baking sheet to freeze prior to searing.
The quarter-pound burger patties will take about 5 minutes per side to cook through over medium heat. Season the burger patties as they cook with a salt and pepper blend.
Burger Mixin
- 1 tsp Beef Powder
- 1/2 tsp MSG
- 1/4 tsp Baking Powder

Salt & Pepper Blend
Combine the ingredients together to make the salt and pepper blend and use to season the burger patties as they cook.
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper

Smoked Salt & Pepper
A bot of liquid smoke can be added to the standard salt & pepper blend to add a smokey flavor. Add about 1/4 tsp of liquid smoke and mix it in well.

Hamburger Buns
The hamburger buns used in this recipe are kaiser buns. However, larger-sized hamburger buns can also be used just the same. Butter the buns and toast them over medium heat.

Bacon
Two strips of crispy bacon per burger. Place them on a baking sheet and into a cold oven. Turn the heat up to 400F and cook for 13-15 minutes or until crisp to your liking. While the bacon is cooking, the buns can be toasted and the burgers seared after toasting the buns. Drain out the grease to save for other recipes.
Swiss Cheese
Use one slice of Swiss cheese per burger and place it on the burger patties just as they are coming off the heat to transfer to the hamburger buns.

Dijonnaise
Dijonnaise is a beautiful blend of mayonnaise and dijon mustard. It works wonderfully well with bacon and Swiss too. Use about 1-2 Tbl slathered on the crown per burger.

BBQ Sauce
BBQ sauce is another sauce that works really well with bacon and Swiss to make a BBQ bacon & Swiss burger. Just exchange the Dijonnaise for BBQ sauce.
Bacon & Swiss Burger Assembly
Place the Swiss cheese slice on the burger patties as soon as they come off the heat and place it onto the bottom bun. Top with a bacon split into two and slather Dijonnaise on the top bun. Serve right away or wrap in tinfoil or waxed paper to hold and meld the flavors before serving.

Bacon & Swiss Burger with Fries
Heat the deep fryer up, and when hot, start toasting the buns and deep-frying the fries. Lift the baskets up and rest while you sear the burger patties. Once you start assembling the Swiss & Bacon Burgers, lower the basket of fries in one more time, about a minute, for a final crisp, and serve. Optionally with a small dipping bowl of gravy.

- 4 Quarter Pound Burger Patties
- 4 Kaiser Buns - or Hamburger Buns
- As Needed Butter - for the buns
- 4 Slices Swiss Cheese
- 8 Slices Bacon
Dijonnaise
- 6 Tbl Hellmann's Mayonnaise
- 1 Tbl Dijon Mustard
Salt & Pepper Blend
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
- 1/4 tsp Liquid Smoke - Optional for a smoky flavor
Instructions
- Prep: Prepare the burger patties and place them on a tray to freeze. Combine the Dijonnaise ingredients together and butter the buns. Combine the salt & pepper blend together and set aside until needed. If serving with fries, heat the deep fryer up before starting the bacon to let it get hot.
- Bacon: Place 8 strips of bacon on a baking sheet and transfer to the oven. Heat the oven to 400°F and cook the bacon for 13-15 minutes or until crisp to your liking. Strain off and save the excess grease for other recipes.
- Toasted Buns: While the bacon is cooking, heat a pan over medium heat and wait for it to get hot. Toast the buttered buns.
- Hamburgers: After toasting the buns, remove the tray of hamburger patties and sear each patty over medium heat for 5 minutes per side or until the juices run clear. Season each side with the salt & pepper blend. Just as the patties come off the heat top with Swiss cheese, transfer them to the bottom bun. Slather the crown with dijonnaise and top with bacon. Serve right away or wrap in waxed paper or tinfoil for holding.
