Deli Mayo Ingredients
Hellmann’s Mayonnaise, French’s Yellow Mustard (or Dijon Mustard), Pickle Juice, White Sugar, Green Onion, Celery Salt, White Pepper, Onion Powder, and Garlic Powder.
How to make Deli Mayo
Throw all the ingredients together and mix well; that’s all there is to it!

Deli Dijonnaise
The Deli Mayo and all its variations all start with Dijonnaise and then build upon this.
- Dijonnaise: Dijonnaise is a 6:1 ratio of mayonnaise to Dijon mustard. This is a basic deli spread.
- Deli Mayo: We take the Dijonnaise and add to it pickle juice & sugar, green onion, celery salt, white pepper, garlic powder, and onion powder. This now becomes a secondary spread for deli-style sandwiches in the same style as the Lumberjack or Dagwood sandwiches. You can keep the mustard at the same level as in the dijonnaise or add more.
- Deli mayo variations: Add other ingredients to customize the flavor for deli-style favorites like potato salad, egg salad sandwiches, deviled eggs, dipping sauces, and condiment sauces for burgers, sausages, and hot dogs.
Variations
Customize the sauce for different sandwiches by adding a new ingredient or swapping out an existing one. You can also build on the sauce with extra ingredients to create flavorful spreads, dips, and sauces for other dishes.
Spicy Deli Mayo
For a spicy Deli Mayo, add in some chopped jalapeño or other hot peppers. Hot sauce may be added as well. Such as Sriracha or RedHot Buffalo Sauce.
Eggy Deli Mayo
Add about 1/8 tsp of black salt or more to taste. Optionally drop the celery salt by however much black salt is used. This is really good for deviled eggs or an egg salad sandwich.

Smokey Deli Mayo
Smoked paprika with or without a drop or two of liquid smoke can be added. Really good on burgers.

Sandwiches
A flavorful sauce that is really good on sandwiches, Kaiser rolls, subs, or oven subs and is very similar to the lumberjack spread. The below image is a Chicken Deli Trio Ovensub with Deli Mayo, incredibly delicious!

Ingredients
- 1/2 C Helmann's Mayo
- 2 Tbl Dijon Mustard - anywhere from 4 tsp to 2 Tbl
- 1 Tbl Pickle Juice
- 1 tsp Sugar
- 1 Stalk Green Onion - minced
- 1/2 tsp Celery Salt, White Pepper, Onion Powder, & Garlic Powder - each, 1/4 tsp to 1/2 tsp of any one or all of these, adjust to taste
Instructions
- Combine all ingredients together in a bowl and mix well. Cover and refrigerate. Adjust the flavors however you see fit.
