Pancake Dry Mix
The base dry mix of this recipe uses JAH Poly Flour. To which, we up the sugar a bit to turn it into a Sweet Pancake Dry Mix. You can, in addition to the Poly Flour & Sugar. Add in Egg & Milk Powder for a complete pancake dry mix, to which only water is added. Or use the Milk as the Liquid and add an Egg to the Pancake Dry mix.
Pancake Dry Mix
- 1 Cup Poly Flour
- 4 Tbl Sugar
- optional – 2 Tbl each of Dry Egg & Milk Powder
Types of Pancakes
Classic Pancakes
These are your Classics Light & Fluffy Breakfast Pancakes.
Sponge Pancakes
For Sponge Pancakes, a bit of yeast is added (1/4 tsp) and mixed in well and the pancake batter allowed to rest for 30 minutes or longer. This allows the yeast to work and make a bread like pancake.
Eggy Pancakes
Simple enough, add in extra Eggs and only add enough liquid to get the pancake consistency.
Fruit Pancakes
All different kinds of Fruits can be added into the Mix or served on top. Blueberries, Strawberries, Bananas, Caramelized Apples or Bananas.

Pancake Ideas
Add Chocolate Chips, Cream of Wheat, Nuts, Coffee in place of the Liquid, Chocolate Milk or Strawberry Milk in place of the Liquid.
Pancake Syrup
The most common syrup is Maple Syrup, but it doesn’t have to be. Any kind of Jam with added water to create a syrup consistency can be served on top, or any juice thickened with Cornstarch and cooled can be served over pancakes. Get creative and surprise yourself.

- Caramel
- Juice thickened with Cornstarch

- Baklava Syrup
- Get creative, almost anything sweet will work.
Pancake Toppings
Along with chopped up Fruits or Nuts to top them off. You can top them off with some Whipped Cream, Fluff, Chocolate Shavings, Icing Sugar, Ice Cream, Colored Sugar/Sprinkles or Spiced Cinnamon Butter.
Pancake Sandwiches
Slather on some Jam on a pancake and place another pancake on top to create a Pancake Sandwich, top off with some Syrup. A really good one is some Peanut Butter, Sliced Bananas and Fluff topped off with some syrup. Following McDonald’s you could do an Egg & Sausage or Bacon & Eggs. Get Creative here too!

Classic
- 1 C Poly Flour - prepared
- 4 Tbl Sugar
- 1 Egg
- 1/2 C Milk or Water
Instructions
- Mix 1 Cup of Poly Flour with 4 Tbl Sugar. Add 1 Egg & 1/2 C Milk or Water and whisk.
- Grease a frying pan or griddle on medium to medium low heat.Scoop out pancake batter using 1/4 C and cook until bubbles are uniform throughout the pancake and the edges are firm. Flip and cook the other side.
