Introducing JAH Hearty Hamburger Soup with your choice of filler. Either Rice, Pasta, or Potatoes with or without Barley. This Soup recipe is quite unique and wonderfully packed with Flavor. A JAH Original!
It has a slight tang, with deep flavors that hit the bottom of your throat, with Umami and subtle heat. Add more heat or Chilies if you’re looking for a Spicy Soup.
Hamburger Soup Base
The Soup Base is made up of a few ingredients that yield an exceptional flavor-packed taste in every spoonful. All the ingredients go into a bowl and are set aside until needed.
Hamburger Soup Base
- 8 C Water
- 4 Beef bouillon Cubes
- 1 pack Onion Soup Mix – Optional
- 1 can Tomato Soup
- 2 Tbl Ketchup
- 1 Tbl Worcestershire Sauce, HP Sauce & Smoked Paprika each
- 1 tsp Yellow Mustard & Sea Salt each
- 1/2 tsp Black Pepper
Broth
Beef Broth makes up the bulk of the soup base. Either four Maggi Beef or Knorr Bouillon Cubes to make up 8 Cups of Beef Broth. Check out my Food For Thought post just on Maggi Bouillon Cubes.
Beef Bouillon Cubes
Knorr is a bit pricey and you only get 6 cubes. For an extra few dollars, you can buy a box of Maggi Bouillon Cubes and get 48 cubes. Which taste just as good if not better.
Another brand that is right up there with Maggi because of the Flavor, Amount and Value is Faragello Bouillon Beef Cubes for about the same price as Maggi or a bit cheaper.
Knorr Onion Soup Ingredients
Dehydrated Onions, Salt, Corn Starch, Sugar, Yeast Extract, Colour, Hydrogenated Soybean Oil, Monosodium Glutamate, Corn Syrup Solids, Disodium Guanylate, Disodium Inosinate, Sulphites. May contain milk, soy, sulphites, wheat.
Knorr Onion Soup Mix
This contributes the Onion and other flavors to the Soup. Although this is optional. I have made it with and without. Even adding in a handful of dehydrated Onions to get the boost in Onion and for the Flakes.
Tomato Soup
This adds the Tomato aspect to the Soup and also contributes to thickening just a bit.
Tomato Soup
I tested this with Store-bought Tomato Soup and JAH Homemade Tomato Soup. Both work really well. Although using the Store bought is much faster and easier.
Hamburger Soup Seasoning
Worcestershire, HP Sauce, Mustard, and Ketchup are used to flavor the Broth along with Smoked Paprika, Salt & Pepper. Together, this creates bold and well-developed Flavors.
For a Spicy kick add in some hot peppers or Hot Sauce like Sriracha, or Chili Oil. For a Smokey Flavor, add in some Liquid Smoke!
Addition seasonings can be added in as you like. Adding in one or more of the below to taste.

- Coriander
- Oregano
- Parsley
- Fennel Seeds
- Rosemary
- Aleppo
- Bay Leaves
- Thyme
Hamburger Soup Meat
Brown 1 lb. of Ground Beef without breaking it up too much over medium-high heat. You want some large chunks. Once browned, add the Vegetables to fry for a bit. Then the Flour. Don’t drain the fat away, this is good stuff and adds flavor.
Bacon can also be added. Just chop it into the desired size and fry in the pan until done. Then add in the Ground Beef to brown.
Hamburger Soup Vegetables
This recipe uses 1 Cup each of Onions, Celery, Carrots and three cloves of Garlic to flavor and add some veggies into the soup. These are chopped small and added to the browned beef to fry for a bit.

- Sliced or Shredded Carrots
- Minced Garlic
Other vegetables can be added as you like, Such as
- Bell Peppers
- Spinach
- Radish
- Diced Tomatoes
- Olives
- Mushrooms
- Waxed Beans
- Green Peas
- Corn
- Turnip
Hamburger Soup Consistency
1/4 C of Flour is added to the Soup for thickening. It only thickens it a bit, giving the soup a viscosity that I enjoy in soups. If you like a watery soup, forgo the addition of Flour.
If you like a Hamburger Stew, add another 1/4 C of Flour to the seasoning. I like it somewhere in between. It’s a soup but thickened less than a stew so that it’s still a soup but has some viscosity. Adjust accordingly on how you like your soups. Additional Cream of Soups can be added for a creamy Soup version.
Hamburger Soup Fillers
The Fillers are added to the Soup once the Vegetables have softened a bit, about 8–10 minutes of simmering. The Soup is returned to a hard boil over max heat and the filler added and mixed in.
Potato Hamburger Soup
Add 2 medium diced potatoes (1/2″) to the Boiling Soup, simmer for about 8 minutes – stirring often, cover, and remove from heat. Let sit for 20 minutes.
Optionally boil or steam the potatoes and add to the cooled down Hamburger Soup. You can also bake the Potatoes and let cool in the fridge overnight. Then Peel them and dice to add to the Soup.
Pasta Hamburger Soup
Add 100 g or about 1 Cup of Short Pasta or Egg Noodles, mix, cover, and remove from heat. Let sit for 20 minutes.
Optionally boil the Pasta separate and add it to the cooled down Hamburger Soup.
Rice Hamburger Soup
Add 1 Cup of Rice to the Boiling Soup, simmer for about 8 minutes, mixing often, cover, and remove from heat. Let sit for 20 minutes.
Optionally cook the Rice separately and add it to the cooled down Hamburger Soup.
Barley Hamburger Soup
You can add Barley to the Soup in addition to either Potato, Rice, or Pasta.
Wash & Rinse 1/2 Cup of Barley or however much you would like and place into a separate pot to boil until done. Strain and rinse. Set aside to add to the soup when the Soup is done.
Hamburger Soup Sides
Serve this Soup up with a slice of bread or two slathered with Butter, Crackers or any other sides below.

- 1 lb. Ground Beef
- 2 Medium Potatoes - Medium Diced or Your Choice of Filler, See Notes
- 1/4 C Flour - or more for Stew
- 3 Cloves Garlic - Chopped fine or minced
- 1 C Carrots - Small diced or shredded
- 1 C Celery - Small diced or sliced thin
- 1 C Onion - Diced
- Bell Peppers, Peas or other add ins. - Optional
Soup Base
- 8 C Beef Broth
- 1 can Tomato Soup - or JAH Tomato Soup / About 1 1/4 C
- 2 Tbl Ketchup
- 1 Tbl Worcestershire Sauce, HP Sauce & Smoked Paprika
- 1 tsp Yellow Mustard & Sea Salt
- 1/2 tsp Black Pepper
- 1 pack Onion Soup Mix - Optional
Instructions
- Prepare All the Vegetables and place into a bowl. Prepare your choice of Filler (potatoes, short pasta or Rice) and set aside in a separate bowl.Combine Soup Base Ingredients into another bowl.
- On Medium High Heat in a Stock Pot, Brown Ground Beef. Don't break it down too much, leave it in large chunks to cook.
- Once browned, add Vegetables. Not Potatoes if using, this is your filler. Mix and cook for about 3- 5 minutes.
- Add flour and mix. Add Broth Mixture, Mix and Bring to Boil, scraping the bottom of the pan to lift the fond. Keep at a good Simmer for about 8 minutes, uncovered and stirring often.
- Bring the Soup to a hard boil over max heat and add in diced potatoes to the Boiling Soup. Reduce the heat and simmer for 8 minutes, stirring often, cover, and remove from heat. Let sit for 20 minutes.Or use your choice of another filler and cook accordingly. – See Notes.
