A Hot Turkey Sandwich is a beautiful, quick & easy dinner to put together after a Holiday Turkey Dinner, using leftover Turkey & Gravy. Add some leftover sides like Mashed Potatoes, Stuffing, Vegetables, or make some Fries. Optionally smother them in Gravy to serve on the side.
This is one of my follow-up meals after a Holiday Turkey Dinner and is a really quick dinner to put together, especially where the day or so before was filled with cooking all kinds of things. The next day, it’s about 15 minutes to put this leftover Turkey meal together.
Hot Turkey Sandwich Bread
Butter up two slices of White Bread to place the Hot Turkey unto, or use one slice for an open-faced Hot Turkey Sandwich. Some people even like it with Buttered Toast, Hamburger Buns or Biscuits.
Buttered Bread
Butter up some bread and set aside to await the Hot Turkey meat and Gravy.
Leftover Turkey
Just leftover Turkey heated in a pan with a bit of Water & Butter. It’s just the same as an Old Fashioned Turkey Sandwich, except with Gravy and optional Vegetables.
You can double stack the Turkey, with most of it going into the sandwich and some on top before the gravy is ladled over. The recipe uses about 1/4 lb of Turkey Meat for one sandwich, but you can certainly add more. Especially where this is a sandwich you don’t have to pick up and handle.
Leftover Turkey
Use thinly sliced White Breast Meat with Stripped Dark Meat for the Sandwich.
Salt & Pepper
Use Salt & Pepper to season the Turkey if needed or the below Salt & Pepper blend.

- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Leftover Gravy
Reheat any leftover Gravy to top both the Turkey on the bread and the Top Slice of Bread. You may have to add a bit of water while reheating to correct the consistency.
If there is no leftover Gravy from the Holiday Dinner, make up a new batch of just a standard Gravy with Chicken Broth, Roux, Salt & Pepper to taste and add some Onion Powder, Garlic Powder, Savory & Sage.
Gravy Tip: Add a small amount of Cream of Tartar to your Gravy for an acidic note and to cut through the Fat. It’s just so much better. Want to increase the Umami?, add MSG.
St Hubert Hot Chicken Sandwich
The Poutine Gravy can be made up and served for a St Hubert style Hot Turkey Sandwich instead of using Chicken.
Vegetables
After ladling the Gravy on top of the Hot Turkey Sandwiches, top them off with Mixed Vegetables, Onions, Green Peas, or Green Onions.

Hot Turkey & Gravy with Biscuits
Not quite a Hot Turkey Sandwich, but very good is the Turkey, Gravy and mixed Vegetables on Biscuits or inside a Biscuit Bowl and for me is nostalgic just the same as the Hot Turkey Sandwich. Any Vegetables added can be tossed in with the Turkey & Gravy, quite like a Pot Pie. Ladled over the Biscuits or the Biscuits cut to make small bowls and the Fillings ladled in.

- 1 Sauce Pan
Ingredients
- 1/2 lb Leftover Turkey - or more of White & Dark meat
- 2 Tbl Butter & Water - each
- 1 C Leftover Gravy - or more
- 4 slices Bread - Buttered
- Mixed Vegetables - Optional, or Green Peas, Onions, Corn etc…
Instructions
- Heat a Skillet up over medium high heat with leftover Turkey, Butter and Water. Season with Salt & Pepper to taste, if needed.
- Heat up the leftover Gravy in a saucepan. Adding more water if necessary to get the desired consistency.
- Place the Turkey meat on the slice of Buttered Bread with a small amount of Gravy, and place the other slice of Bread on top. Ladle more Gravy over the Sandwich and optionally top with Vegetables to serve.
