This Deli Turkey Ovensub is made with buttered sub buns stacked with deli turkey breast meat and cheese. Oven toasted and topped with crisp lettuce, thinly sliced tomatoes and onions, and deli mayo for the sauce. Since the sandwich meat is only deli turkey breast, each foot-long sub is topped with 12 slices of deli turkey breast meat each. Serve them up as footlongs for 4 servings or as 6-inch sub with sides for up to 8 servings.
Ingredients for Deli Turkey Ovensub
Deli Turkey Breast, 12-inch Sub Buns, Butter, Cheese (Monterey Jack, Swiss, Cheddar, or Gouda), Lettuce, Onions, Tomatoes, Deli Mayo (Mayonnaise, Dijon Mustard, Pickle Juice, Sugar, Green Onion, Celery Salt, White Pepper, Onion Powder, and Garlic Powder).
Deli Turkey Breast
Since the deli turkey breast is the only meat on the sub. A total of 12 slices is used per ovensub. This recipe makes 4 ovensubs, so you will need about 2 lbs worth of thinly sliced turkey breast meat. Fold the meat over for a layer of 6 to cover the whole sub and repeat with a second layer of folded over meat.
Deli Chicken Ovensub
Deli chicken breast can also be used just as well, instead of turkey, for a Deli Chicken Ovensub. You will still need about 2 lbs worth for these ovensubs.
Ovensub Cheese
Both shredded and sliced cheese can be used, since it will go into the oven and melt anyways. For this recipe I used shredded gouda cheese. However, other cheeses can certainly be used, covering cheddar cheese, Monterey Jack cheese, and even sliced Swiss cheese.

Ovensub Vegetables
The standard ovensub vegetables of lettuce, onions, and tomatoes go on the sandwich after the subs have been toasted in the oven.
- Lettuce: Shredded, washed, and strained.
- Onions: thinly sliced at about 1/32 inch. Soaked in water and strained.
- Tomatoes: thinly sliced at about 1/16 inch. Washed and strained.
Other vegetables can certainly be added and cover such things as pickles, chilies or jalapenos, banana peppers, arugula, avocados, and sprouts.
Deli Mayo
Deli Mayo is the spread used for these toasted delli turkey ovensubs. It’s easy enough to put together too. Just combine everything into a bowl and mix well. Refrigerate it until ready to use.
How to make a Deli Turkey Ovensub
Preheat the oven to 400°F to 450°F with the rack in the middle position or one notch higher. Prepare all vegetables and the deli mayo spread.
Butter both sides of the buns on a baking sheet. Layer meat and cheese on the bottom sub-bun. leaving the top sub bun just buttered to toast. Place into the oven to toast for 5 minutes. This will warm the meat up, melt the cheese, and toast the buns.

Once the ovensubs have toasted for 5 minutes. Spread Deli mayo on the top bun.

Top with onions, tomatoes, and lettuce. Optionally, a bit of salt & pepper over the tomatoes.

Fold over the top bun and slice the ovensubs in half. Serve right away or wrap in foil or wax paper to hold and serve later.

6-inch Deli Turkey Ovensub
This recipe makes 4 x 12-inch ovensubs for 4 servings. You can, however, stretch this out to make 8 servings of 6-inch subs with various sides such as chips or fries. Otherwise, wrap any leftover 6-inch subs in foil or wax paper and refrigerate to have at a later time.

Ingredients
- 4 x 12-inch Sub Buns
- As Desired Butter - for buttering the buns
- 48 slices Deli Turkey Breast - 12 per 12-inch sub
- 200 g Shredded Cheese - Cheddar, Gouda, Monterey Jack or other kinds
- As Desired Shredded Iceberg Lettuce
- 1 Small Onion - thinly sliced about 1/32 inch thin
- 2-3 Roma Tomatoes - thinly sliced about 1/16 inch thin
Deli Mayo
- 1/2 C Hellmann's Mayonnaise
- 2 Tbl Dijon Mustard
- 1 Tbl Pickle Juice
- 1 tsp Sugar
- 1 Stalk Green Onion - minced
- 1/2 tsp Celery Salt, White Pepper, Onion Powder, and Garlic Powder - each
Instructions
- Preheat the oven to 400°F to 450°F with the rack in the middle position or a notch higher. Deli Mayo: Combine all the ingredients for the deli mayo and mix well. Refrigerate until needed.
- Cold Vegetables: Prepare and wash the vegetables and set them aside until needed.
- Toasted Ovensubs: Slice each 12-inch foot-long sub in half on a baking sheet and butter both halves. Top with deli meat and shredded cheese on the bottom half of the sub buns. Leave the top half just buttered to toast. Place the tray into the oven to toast for 5 minutes.
- Assembly: Spread a good layer of deli mayo on the top buns and top with onions, lettuce, and tomato slices. Flip the top buns over the bottom buns with meat and cheese and slice in half to serve right away or wrap in foil or waxed paper to hold and serve later.
