These Cheesy Beef Burrito Enchiladas take your Cheesy Beef Burritos and combines them with an Enchilada style Red Taco Sauce with the Enchilada Paste to create an Enchilada Sauce. With some Cheddar Cheese, either the regular Cheddar or the Old Fort White Cheddar Cheese, and Baked. Serve these Enchilada Burritos with some Mexican or Taco Rice for an amazing Taco Tuesday meal. While this version is a Cheese Beef & Bean Burrito Enchilada version, you can certainly use any kind of Burrito to make it just the same.

What are Enchiladas

Enchiladas, a classic Mexican dish, feature tortillas filled with various ingredients such as chicken, beef, pork, cheese, beans, or vegetables. Cooks typically use corn tortillas, filling them before rolling them up like a burrito. Afterward, they cover the rolled tortillas with a chili-based sauce—often red (roja) or green (verde)—and bake them until hot and bubbly. Cheese melts on top, while fresh herbs, sour cream, or sliced avocados sometimes add extra flavor. Serve enchiladas as a main course, pairing them with sides like rice, beans, or salad.

Cheesy Beef & Bean Burritos (Ground Beef, Water, Old El Paso Taco Seasoning, Beef Bouillon Cube, Refried Beans, Lemon Juice, Cheddar Cheese, Large Tortillas.), Enchilada Sauce (Water, Tomato Paste, Ketchup, Taco Seasoning, Vinegar, Sugar, Enchilada Paste (Onion, Garlic, Tomato, Guajillo Chiles, Chiles de arbol, Pimento Paste, Neutral Oil)), Cheese.

Cheesy Beef & Bean Burritos

These Burritos are stuffed with Taco seasoned ground beef, Refried Beans and Cheese. I got a separate recipe for these all by themselves, “Cheesy Beef & Bean Burritos”. Before putting this dish together make sure you have these made up fresh or previously made, completely thawed and converting them into Beef Burrito Enchiladas with the premade Enchilada Sauce and more Cheese to top it off.

Enchilada Sauce

This Enchilada Sauce is based off of the Red Taco Sauce, with a few adjustments. Instead of going for a commercialized Red Taco Sauce. The Enchilada Sauce takes basic ingredients and combines them almost the same way for a more refined Enchilada style sauce that includes an Enchilada Paste to add more flavor, fill out the sauce, and give more body to it.

Enchilada Base Sauce

Combine the following ingredients into a sauce pot along with the Enchilada Paste to simmer for about 5–10 minutes, that’s it!

Enchilada Sauce no Enchilada Paste
  • 1 1/4 C Water
  • 1 Cube Bouillon — Beef, Chicken, Pork, or Vegetable
  • 1/2 C Tomato Paste
  • 1 Tbl Taco Seasoning — or 1 tsp Oregano & Cumin, and Black Pepper to taste
  • 1 Tbl Ketchup
  • 1/2 Tbl White Vinegar — can use Lime or Lemon Juice, added to taste
  • 1 tsp Sugar — Optional or more for sweeter
  • To Taste Salt & Pepper

The base Sauce can be used just as is to make the Enchiladas, as pictured below. It does however taste better and is a bit thicker when the Enchilada Paste is added.

Enchilada Paste

Simply use an Enchilada Paste to derive even more flavor and create a bodied sauce that will coat the Enchiladas or Wet Burritos. Place all the ingredients into a glass jar with a mouth opening large enough to fit an immersion blender and purée. Empty it into the pot with the Enchilada Base Sauce, easy.

Enchilada Paste Ingredients

  • 1 Onion
  • 1-2 Tomatoes
  • 3 Garlic Cloves
  • 1/4 C Pimento Paste
  • 1 Tbl Oil
  • 1-3 Soaked Guajillo Peppers or other Chilies such as Ancho or Pasilla or combinations
  • Chiles de Arbol can be added for heat or the use of Hot Pimento paste

How to make Enchiladas

First, the Cheesy Beef & Bean Burritos and Enchilada Sauce need to be made in advance. If you’re doing this from scratch, then check out the recipes for Cheesy Beef & Bean Burritos and Enchilada Sauce in order to make these up before putting together. Previously made up and frozen Burritos that have been thawed overnight can be used as well.

Sauce the Pan

Place some Enchilada Sauce in a pan just large enough to fit all the burritos. Shake the pan back and forth to even out the sauce.

Place the Cheesy Beef & Bean Burritos into the pan, seam side down, with a bit of space between each burrito.

Ladle more Enchilada Sauce on top and spread to cover the Burritos.

Sprinkle each Enchilada Burrito with Cheese and cover with tin foil or a lid.

Baked Enchiladas

Bake

Bake in a preheated oven at 350 F — 400 F for 10 minutes. I like the higher heat so that the sauce goes a bit pasty and there is some charring of the burritos, but you can cook at a lower heat if desired.

After 10 minutes, uncover to cook an additional 10 minutes.

Burrito Enchiladas Bowls

This is actually pretty cool because it lets you add a variety of extra ingredients to the bowl after cooking, making the meal more complete all in the same bowl, and the bowls can be served straight from the oven. The preparation stays the same, but each burrito or enchilada cooks in a single-serve au gratin dish or tin foil bowl.

Once it’s ready, you can top it with an assortment of foods like Pico de Gallo, Guacamole, Lettuce, Sour Cream, Rice, and more.

What Rice to serve with Enchiladas

A nice side of Rice with Cheesy Beef & Bean Burritos is very nice and fills out the meal. My go-to is either Taco Rice or Adobo Sazon Rice. But other varieties work too, such as Yellow Cumin Rice or Mexican Rice.

  • Preparation: Prepare both the Cheesy Beef & Bean Burritos and Enchilada Sauce so that these are ready.
    Preheat the oven to 350F — 400F with the rack in middle position.
  • Enchiladas: Ladle a small amount of Enchilada Sauce into a pan just large enough to fit how many Enchiladas you are making at one time. Shake the pan back and forth to level out the sauce.
    Place each Burrito into the tray seam side down.
    Ladle and spread more enchilada sauce over the burritos.
    Sprinkle cheese over each burrito. Cover and bake for 10 minutes. Uncover and bake an additional 10 minutes or until the cheese is melted to your liking and serve.

Notes

 
If making this from scratch, it will take about 50 minutes to have the Burritos & Enchilada sauce ready. Otherwise, previously made Burritos that have been frozen can be thawed in the fridge overnight and used. 
 
Serve it with Taco Rice or Adobo Sazon Rice! Add a Dollop of Sour Cream too. If serving with Rice, start the rice, right before you start assembling the Enchiladas.
