These Cheesy Beef Burrito Enchiladas take your Cheesy Beef Burritos and combines them with an Enchilada style Red Taco Sauce with the Enchilada Paste to create an Enchilada Sauce. With some Cheddar Cheese, either the regular Cheddar or the Old Fort White Cheddar Cheese, and Baked. Serve these Enchilada Burritos with some Mexican or Taco Rice for an amazing Taco Tuesday meal. While this version is a Cheese Beef & Bean Burrito Enchilada version, you can certainly use any kind of Burrito to make it just the same.
Preparation: Prepare both the Cheesy Beef & Bean Burritos and Enchilada Sauce so that these are ready. Preheat the oven to 350F — 400F with the rack in middle position.
Enchiladas: Ladle a small amount of Enchilada Sauce into a pan just large enough to fit how many Enchiladas you are making at one time. Shake the pan back and forth to level out the sauce. Place each Burrito into the tray seam side down.Ladle and spread more enchilada sauce over the burritos. Sprinkle cheese over each burrito. Cover and bake for 10 minutes. Uncover and bake an additional 10 minutes or until the cheese is melted to your liking and serve.
Notes
If making this from scratch, it will take about 50 minutes to have the Burritos & Enchilada sauce ready. Otherwise, previously made Burritos that have been frozen can be thawed in the fridge overnight and used. Serve it with Taco Rice or Adobo Sazon Rice! Add a Dollop of Sour Cream too. If serving with Rice, start the rice, right before you start assembling the Enchiladas.
