We’re talking Pizza, sauced with Buffalo Sauce and topped with marinated Diced Chicken, Bacon & Peppers, with a Mozzarella/Provolone Cheese Blend. Optionally, with Ranch Dressing or Blue Cheese Dressing drizzled on top. Enjoy a wicked good Buffalo Chicken Pizza, JAH Style!
Buffalo Chicken Pizza Ingredients
Pizza Dough (Overnight Pizza Dough or Classic Hand-Tossed), Buffalo Sauce (Margarine & Franks RedHot Sauce), Chicken Breast, Marinade (Water, Oil, Chicken Broth Powder, Sea Salt, Lemon Juice, Onion Powder, Black Pepper, Paprika), Bacon, Peppers, Mozzarella Cheese. Optionally with Ranch or Blue Cheese dressing drizzled over top.
Pizza Dough
Prepare the day before, using the Overnight Pizza Dough or the Hand Tossed Pizza Dough. Both of which make about, 1500g of Pizza Dough. Both of these recipes for the Pizza dough will also walk you through on how to shape and stretch the pizza for assembly.
Buffalo Sauce
The Classic Buffalo Sauce mixed at your preferred ratio. Mild, Medium, or Hot. This is the base sauce of the pizza. You can also use some in the Chicken Marinade and on the side for dipping. Place into the Microwave for a few seconds to melt, or on top of the Stove while preheating the oven so that the residual heat will melt the butter.

Marinated Chicken
The marinade for Buffalo Chicken Pizza comes from the Grilled Chicken Marinade. Except, we use half the amounts and leave out both the Liquid Smoke and Parmesan. Combine the marinade ingredients together with diced chicken and mix. Refrigerate for at least one hour.
When ready to cook, heat a skillet over medium high heat and empty into the pan with the marinade and leave it there until the water evaporates and leaves behind the fat. To which you can toss the chicken around to brown it. Set aside to top the Pizza when ready to make.
You can also drizzle in a small amount of Buffalo Sauce to toss with the Chicken and set aside until ready to use, or include some into the marinade.


Pizzeria Minced Bacon
Mince or chop about 2 slices of Bacon and cook in a pan, over medium heat, until just crisp. Strain the grease out and save for other recipes, and set aside the bacon until ready to top the pizza.

Peppers
Slice or Dice Peppers and set aside until ready to top the Pizzas. You can opt for just Green Bell Peppers or a Mix of Bell Peppers. Add some Jalapeños or Red Chilies to increase the heat.
Cheese
While you can use just a high Quality Pizzeria style Mozza Cheese offered by Saputo. The 3:1 blend of Mozzarella Cheese and Provolone Cheese is a fantastic blend for Pizzas and other dishes where a good melting cheese with added flavor from the Provolone can be used.
Use a food processor to quickly shred the Mozza cheese and empty into a freezer bag. Do the same for the Provolone cheese and into a separate freezer bag. Combine 3 C of Mozza & 1 C of Provolone into another freezer bag and mix. Freeze all three bags. The Cheese can be used straight from frozen to top your pizzas or any other dish. You may have to break up the cheese a bit.
Buffalo Chicken Pizza Toppings
Along with the marinated and cooked Diced Chicken. Top the Pizza off with finely chopped or minced cooked Bacon and Green Bell Peppers, or a mix of Peppers.


Finishing Sauce for Buffalo Chicken Pizza
Ranch or Jalapeño Ranch Dressing squeezed over the oven fresh Pizza is a really nice addition to Buffalo Chicken Pizza. Blue Cheese Dressing can be used as well or served on the side for dipping.
Dipping Sauce for Buffalo Chicken Pizza
Special Garlic Sauce & Ranch Dressing serves as excellent Pizza Dips. But a side of Blue Cheese Dip or more Buffalo Sauce is nice too.

Cooking Buffalo Chicken Pizza

Equipment
- 1 Marinating Bowl
- 1 Pizza Screen or Pan
- 1 Pizza Stone
Ingredients
- 1 M-L Pizza Dough - Overnight Pizza Dough or the Hand Tossed Pizza Dough
- 1/2 Whole Bell Pepper - Sliced or Diced, can use a mix of peppers
- 2 Strips Bacon - Finely chopped or minced
- As Desired Mozzarella Cheese
- As Desired Ranch Dressing - Optional, drizzled on top
Buffalo Sauce
- 1/4 C Margarine - Use 2 Tbl for Spicier
- 1/4 C Franks RedHot Sauce
Chicken Marinade
- 1 Chicken Breast - Diced into bite size pieces, about 1/2 lb or slightly more
- 1/4 C Water
- 2 Tbl Neutral Oil
- 1/2 tsp Chicken Powder & Sea Salt
- 1/4 tsp Onion Powder & Lemon Juice - each
- 1/8 tsp Paprika & Black Pepper
Instructions
- Preparation: Prepare the Pizza Dough the day before. Roughly at the same time, you plan on cooking the pizzas the next day. Make the Buffalo Sauce, and set aside. Dice Chicken Breast into bite size pieces and marinate overnight or at least 30 minutes.Day of — Prepare the Cheese & Peppers.Preheat the oven to the highest setting it will go. With 1 rack positioned at the bottom with a pizza stone and another rack in the middle.
- Cook the Bacon: Mince the Bacon and cook in a pan over medium heat until just crisp. Strain the grease out and save for other recipes. Set the bacon aside until ready to top the pizza.
- Cook the Chicken: Empty into a pan set over medium high heat and leave it until the water evaporates and the chicken starts frying. Toss it around to cook through and give good color. Set it aside until ready to top the pizzas.
- Assembly: Stretch the Pizza Dough and transfer to a pizza screen. Sauce with the desired amount of Buffalo Sauce, good coverage. Any remaining sauce can be served on the side or drizzled over the pizza. Add your Peppers, Bacon, Chicken, and top with Cheese.Transfer the Pizza to the middle rack and cook using the 413 Pizza Cook Method.
- 413 Pizza Cook Method:4 Minute Cook: Transfer to the oven to cook for precisely 4 minutes in the middle rack position.1 Adjustment: At the 4-minute mark (3 minutes of cook time remaining), immediately place the oven on broil. Remove the Pizza from the Screen or Pan to come in direct contact with the pizza stone on the bottom rack position. Flip it around so that the front is now facing the back.3 Minute Broil: Broil for 3 minutes. Immediately take the oven off of Broil and back on to the highest setting. Then transfer the Pizza back to the Pizza Screen or Pan and remove. Slice the pizza and set aside or serve.
- Garnishing: Drizzle Ranch or Blue Cheese Dressing over top if desired. Garnish with Parsley & Chili Flakes. Serve with Dipping Sauce.
