Beef & Broccoli Stir Fry! It’s a must have sometimes. Tender Meat & Broccoli coated in a Sweet & Savory Stir Fry Sauce. Enjoy it all by itself with added Vegetables like Carrots, Bean Sprouts or Napa Cabbage or with a side of Steamed White Rice.
Beef
Any cut of Beef can be used here. Although typically, Flank or Sirloin is used. I make this with any Beef I have on hand. Usually with 1 inch Steaks that I slice thinly across the grain.
You’re not limited to Beef, either. Thinly sliced Pork can be used too for Pork & Broccoli Stir Fry.
Thinly Sliced Beef
Slice about 1 lbs. of Steak across the grain and into thin strips.
Beef & Broccoli Marinade for Beef
The Marinade not only seasons the Beef, it also Velvets it, causing a Silky Smooth Beef that is really enjoyable. It’s the Baking Soda that is added that tenderizes the meat.
While you should marinate for 30 minutes plus. I do tend to marinate right at the beginning and just set it aside until everything else is ready. The longer the Meat stays in the marinade, the more tender it will become.
This does not need to be rinsed off. It can go directly to the Wok to Sear and mix around until cooked through. This will cause a super silky smooth Beef.
Beef Marinade
Combine the below ingredients in a bowl with Beef.
- 2 Tbl Starch & Water
- 1 Tbl Neutral Oil & Soy Sauce
- 1/2 tsp Garlic, MSG & Sea Salt
- 1/4 tsp Baking Soda
Use Potato or Cornstarch for the Starch.
Sesame Oil
This is a very nice addition and can be used instead of a Neutral Oil or Half Neutral Oil and Half Sesame Oil in both the Meat Marinade and when adding oil to the Wok.
Sesame seeds can be sprinkled on top as well as a garnish.
Broccoli
Two Broccoli Crowns are used for the Beef & Broccoli Stir Fry. Chop the Stalk off and break into Bite Size Florets. Try to avoid thick Stems as these will take much longer to cook.
Place into a Bowl and fill with Cold water. Move the Broccoli around to wash and rinse it. This also helps to get rid of any loose buds when the Broccoli is strained.
The Broccoli is cooked first in a bit of Oil for about 5 minutes. With Fresh Broccoli, add 2 Tbl of Water and cover to in effect Steam for softer Broccoli. With Frozen Broccoli, you won’t need to add any water at all.
Another option is to place a good amount of water into the Wok over max heat and simmer the Broccoli for a few minutes until just done. Strain and then set aside. In this case, add the Garlic & Ginger once the meat is cooked through to cook briefly, then add in the Broccoli.
Beef and Vegetable Stir Fry
A whole assortment of other Vegetables can be included such as Carrots, Napa Cabbage, Bean Sprouts, Onions and/or Green Onions, Celery and Mushrooms, and even Bell Peppers.
Frozen Vegetables can also be used and stir-fried in the Wok with fat until just about done and then scooped out and set aside to add back in at the end. You won’t need to add any water with Frozen Vegetables.
Beef & Broccoli Stir Fry Sauce
The Sauce is very easy to put together. I always have Maggi Beef Bouillon Cubes on hand, so I use 1/2 a Cube for 1 Cup of Water to create the Broth.
Beef & Broccoli Sauce
- 1 C Beef Broth
- 2 Tbl Oyster or Hoisin Sauce
- 2 Tbl Brown or White Sugar
- 1 Tbl Potato or Cornstarch Starch
Thicker Stir Fry Sauce
If you find you want the Sauce a bit thicker, combine equal amounts of Starch & Cold Water and mix. Add a small amount to the simmering Stir Fry and mix. Wait a few seconds to see how thick it goes and add more if needed until you get the desired thickness.
Thinner Stir Fry Sauce
For a thinner Sauce, just add a splash of water and mix in. Repeat until the desired consistency is reached.
How to cook Beef & Broccoli Stir Fry
If you choose to cook additional Vegetables. Cook them in a little Oil until tender and set aside with the Broccoli. If the Florets start to fall apart and speckle the Stir Fry, you have overcooked the Broccoli. Watch for this during the last cook.
Beef & Broccoli Meat Marinade
Combine the Meat marinade ingredients into a bowl. Thinly Slice the Beef and add to the marinade. Toss and mix well. Set aside until needed.
Beef & Broccoli Stir Fry Sauce
Combine the Stir Fry Sauce ingredients together in another bowl and set aside until needed.
Vegetables
Wash and prepare the Broccoli along with Garlic & Ginger and any other Vegetables you may want to add.
Cook the Vegetables
With a Wok over medium heat and 1 Tbl of Oil preheated for about 2 minutes, add the Fresh Broccoli with 2 Tbl of Water or more if needed. Cover to steam the Broccoli, stirring it a few times until just tender. Add the Ginger & Garlic to fry for about 30 seconds. Empty back into the Bowl the Broccoli was previously in.
Stir Fry any other Vegetables until just tender and add it into the bowl with the Broccoli.
Sear the Meat
Add marinated Meat in an even layer and leave for 1-2 minute to sear. Give it a mix and leave again for another 1–2 minutes. Mix again and continue to cook until done, mixing more frequently.
Everything in the Wok
Add the Vegetables back into the Wok along with the Stir Fry Sauce and cook until thickened while mixing. If using Bean Sprouts or Green Onions, they can be added here to the meat and mixed in before adding in the Sauce.
At this point you can cover the Wok to assist softening the Broccoli to the desired tenderness or serve right away.
Vegetables to add to Beef & Broccoli Stir Fry
Additional Vegetables can be added such as Onions, Napa Cabbage, Peppers, Bean Sprouts, Mushrooms, Carrots, or a Frozen Vegetable Mix. Vegetables can be Stir Fried with some Oil until softened and set aside with the Broccoli in the same bowl.
In the case of Bean Sprouts or Green Onions, these can be added just before the sauce is added, since they don’t take too long to cook.
Beef & Broccoli Stir Fry with Frozen vegetables
Another variation includes using Frozen Broccoli, Cauliflower and Carrots. While not quite as good as using fresh because there is some texture lost with frozen vegetables, they are still pretty good.
The trick with frozen vegetables is that they are waterlogged, so you need to fry them with some Oil on Max Heat for 3–5 minutes. This cooks the Vegetables as well as evaporate excess water. Set them aside to add back in later.
Beef and Broccoli with Steamed White Rice
This is also excellent with a bowl of packed Steamed White Rice inverted on the Plate, with Beef and Broccoli served around the Rice or over top.
Steamed White Rice
Just the Classic Water and Rice for traditional Steamed Rice or with the optional seasoning for a bit more flavor.
Equipment
- 1 Wok
- 1 Steel Bowl & Strainer for the Broccoli
- 1 Marinating Bowl for the Beef & Marinade
- 1 Bowl for the Sauce
Ingredients
- 1 lbs Flank Steak - or other cut of Beef
- 2 crowns Broccoli
- 3 cloves Garlic - minced
- 1 inch Ginger - minced
- To taste Salt & Pepper
- 1 Tbl Neutral Oil
Beef Marinade
- 2 Tbl Starch & Water - Potato or Cornstarch
- 1 Tbl Neutral Oil & Soy Sauce - can use Sesame Oil or half and half
- 1 Tbl Sake
- 1/2 tsp Garlic Powder, MSG & Sea Salt - each
- 1/4 tsp Baking Soda
Beef & Broccoli Stir Fry Sauce
- 1 C Beef Broth
- 2 Tbl Oyster or Hoisin Sauce - either one
- 2 Tbl Sugar - Brown or White Sugar
- 1 Tbl Starch - Potato or Cornstarch
Instructions
- Combine marinade ingredients into a bowl. Thinly slice Beef across the grain. Place into marinade and mix well, set aside until ready to cook.Combine Beef & Broccoli Stir Fry Sauce into another bowl and set aside until needed. Cut the Broccoli close to the Florets to avoid any thick stems. Place into a Steel Bowl and Fill with water to wash and strain.Mince the Garlic & Ginger.
- With everything set up and right beside you, ready to go. Add 1 Tbl of Oil in the Wok on Medium Heat and wait a 1–2 minutes before adding the Broccoli. Add the Broccoli with 2 Tbl Water and cover to steam. About 5 minutes or so, add more water if needed to ensure you get the Broccoli just about done.
- Add in your Garlic & Ginger with the Broccoli, cook for 30 seconds. Empty this back into the bowl that the Broccoli was previously in. Cook any additional vegetables if adding them in until just tender, and empty into the bowl with the Broccoli.
- Add marinated Beef in an even layer and leave for 1-2 minute to sear. Give it a mix and leave again for another 1–2 minutes. Mix again and continue to cook until done, mixing more frequently.
- Add the Broccoli along with any optional vegetables and the Sauce. Mix well and cook until thickened. If adding in Bean Sprouts or Green Onions, add them in before the sauce just to mix in, then add the Sauce. Cover and simmer until the Broccoli is Tender to your liking. Adjust the Seasoning with Salt & Pepper and serve right away.
