Beans & Bologna is a wonderful homestyle meal that is made up of fried bologna and molasses-baked beans. I like to include a bit of homemade sauerkraut and serve it with sliced buttered bread or a dinner roll. It’s a cheap, quick weeknight meal too, ready in less than 30 minutes.
There are other similar derived dishes such as Saube (sauerkraut, sausage & beans) & Beans & Hotdogs, which is also served with sauerkraut and optionally sliced buttered bread or dinner rolls.
Ingredients for Beans & Bologna
Canned Molasses Baked Beans, Bologna, Sauerkraut, Bread & Butter.
Rendered Pork Fat
If you have previously saved pork fat, then render the fat out of it to use as the fat to fry the bologna. Don’t discard the fat; it can go into the beans when heating through. Outside of this, bacon grease or lard can be used to fry the bologna.
Fried Bologna
Use about 2-3 slices of Bologna. Heat the skillet up with fat over medium heat and fry the bologna to your liking. Make a slit in the bologna to prevent the center from pocketing up. Optionally season with salt & pepper to taste.

Beans
Use canned molasses baked beans, with a bit more molasses added to taste during cooking. The canned beans are quick and easy, and you can add a bit of ketchup or BBQ sauce too if desired. You could go with homemade spiced baked beans too. Prepare them in advance or use leftovers and then just reheat them after frying the bologna.

Beans & Bologna Sides
I really love the addition of homemade sauerkraut; you could go store-bought too. It really helps to keep things fresh and contrast nicely with the beans and bologna. Sliced buttered bread or dinner rolls are very good too and help to soak up any leftover sauce from the beans.
Ingredients
- 4-6 Slices Bologna
- 2-3 Tbl Fat - rendered pork fat, bacon grease or lard
- 1 Can Baked Molasses Beans - or Homemade Spiced Baked Beans
- As Desired Sauerkraut - or Homemade Sauerkraut
Instructions
- Fried Bologna: Heat a skillet up over medium heat with fat. Season the bologna with salt & pepper if desired and fry to the preferred doneness. Transfer the fried bologna to a plate. Optionally plate with some sauerkraut as well.
- Baked Beans: Add the baked beans to the hot skillet and heat through. Plate and serve with sliced buttered bread or dinner rolls.
