Soft and tender Steamed Potatoes coated in a wonderful Garlic & Herb Butter! Serve it in a bunch of different ways. A Simple and Delicious side dish that you just need to have once in a while.
The Potatoes used for this recipe are the small baby potatoes steamed whole.
You can also use regular potatoes and chop them up before steaming as well, however, the small potatoes really do come out much better with the skin sealing in the natural sugars and starches of the potatoes.
Depending on their size it will take about 15- 20 minutes to steam them. If they are the larger baby potatoes then you may want to cut them in half before steaming. Insert a knife through one of the potatoes to see if it goes through with no resistance.
Garlic & Herb Butter
For the Garlic & Herb Butter, I use JAH Garlic Butter Oil which is a Papa Johns Style Garlic Butter Dip. To this, I add in some herbs like Parsley, Thyme, Aleppo, or Chili Flakes.
Other Herbs and Spices can be added as desired such as Marjoram, Savory, Rosemary, and Paprika. Really it’s up to you and what you prefer. The Garlic Butter itself will give ample Garlic and Buttery taste to the Potatoes.
Once the potatoes are done add them into a bowl and toss with the Garlic Butter. Allow them to cool in the bowl with the butter before tossing again and serving.
Steaming the Potatoes
I have a Rice cooker that has a steam setting on it with a basket. Although I have used the vegetable Steamers as well which cook the same way.
Place the washed Potatoes in the steamer basket and fill the steamer up with just a bit of water. Steam until fork tender all the way through the potato. About 15 – 20 minutes.
Variations of Steamed Potatoes
Garlic Butter & Herb is my go-to however I do switch it up depending on what I’m in the mood for. Other Seasoning or Sauces can dress the Potatoes. Below are some ideas.
- Flavored Oils & Vinegar or Compound Butters
- Various Dressings like Ranch or French
- Cheese Whiz Sauce & Bacon, optionally with steamed or Roasted Brocolli
- Pepper Coulis Sauce
- Aioli or Toum
You can also plate the Steamed Potatoes on a layer of Sour Cream, Tzatziki Sauce, or sprinkle Shredded Cheese on top of the Hot Steamed Potatoes.
These can also be placed on a baking sheet and Smashed and then drizzled with the Garlic Butter & Herbs or Olive Oil with some Salt & Pepper. Baked in the oven at 400 F until golden crisp.
Once steamed smash them with a potato masher or large fork and allow them to air dry for a bit. Ten or so minutes or longer before drizzling your fat and seasoning with salt and pepper or other seasonings. Then bake in the oven for about 30 minutes or longer until crisp.
I often make these up when I render fat to sear meats. After the meat has been cooked and I am left with the rendered fat, I use the rendered fat to drizzle over the Smashed Potatoes with a bit of Salt and Pepper. I also use Bacon Fat by itself or added with the rendered fat.
