Steamed Potatoes


Soft & Tender Steamed Potatoes coated in a wonderful Garlic Butter Sauce! Make them with Peeled and Diced Potatoes or for a treat some New Potatoes or baby Potatoes. Optionally add some Herbs in like Parsley, Chives, Aleppo or Pepper. It’s a Simple & Delicious side dish that you just need to have once in a while. Just add them to a bowl with some of that Garlic Butter Sauce and toss and let them soak it up.
Potatoes
New or Baby Potatoes are really nice with the skins left on. Chop the larger ones in half so that they are all roughly the same size. The skin seals in the natural Sugars & Starches of the Potatoes which really does make them a nice treat.
However using regular Potatoes, peeled, diced and added to the Garlic Butter Sauce after they have air cooled a bit, primes them up for absorbing that Butter. Which makes these really good too.
I have used Russet or Yukon as I usually have these on hand. I really like the taste of White Potatoes too. In general though for steaming Potatoes, either Waxy Potatoes or New Potatoes hold up well.

How to Steam Potatoes
Place the washed Baby Potatoes or peeled Potatoes chopped to about the same size as Baby Potatoes in the Steamer Basket. Fill the steamer up with just a bit of water. Steam until fork tender all the way through the Potatoes, about 15 – 20 minutes. Check at 15 minutes. Once done, remove the basket and let them air dry for a minute.

Steamed Diced Potatoes
Steamed diced White Potatoes for 15 minutes.
Garlic Butter Sauce
For the Garlic Butter Sauce, I use Papa Johns Garlic Sauce. To this, you can add in some herbs like Parsley, Chives, Thyme, Aleppo, or Chili Flakes.
Other Herbs & Spices can be added as desired such as Marjoram, Savory, Rosemary, and Paprika. It’s really up to you and what you prefer. The Garlic Butter itself will give ample Garlic & Buttery taste to the Potatoes.
Once the Potatoes are done, let them air dry a bit and add them into a bowl to toss with the Garlic Butter. Allow them to cool in the bowl with the Garlic Butter before tossing again and serving.

Garlic Butter Sauce
- 1/4 C Butter
- 1/4 C Oil
- 1 1/4 tsp Garlic Powder
- 1/2 tsp Butter Popcorn Seasoning
- Pinch of Citric Acid
How to make Steamed Potatoes

Wash the Potatoes
Wash the Potatoes well. With New Potatoes leave them whole and only chop the bigger ones in half so that they are all roughly the same size.
For regular Potatoes either peel or leave the skin on and dice.

Steam the Potatoes
Place water into the steamer and place on max heat. Once steaming, place the Potatoes in and steam for 15 minutes. Check the tenderness with a fork and steam longer if needed.
Once tender lift the basket up and let air dry for a minute or so. This will evaporate excess water and dry the Potatoes.

Toss in Butter
Toss into the Garlic Butter and gently toss. Leave them there for a bit to soak up the Garlic Butter. Toss again before serving and season with Salt & Pepper.
Garnish with Parsley & Aleppo.
Smashed Potatoes
These can also be placed on a baking sheet and smashed. Then drizzled with the Garlic Sauce or Olive Oil with some Salt & Pepper. Baked in the oven at 400 F until Golden Crisp for Steamed & Smashed Potatoes.
Once steamed, smash them with a Potato masher or large fork and allow them to air dry for a bit. Ten or so minutes or longer before drizzling your Fat and seasoning with Salt & Pepper or other seasonings. Then bake in the oven for about 30 minutes or longer until Crisp.
I often make these up when I render fat to sear meats. After the meat has been cooked and I am left with the rendered fat, I use the rendered fat to drizzle over the Smashed Potatoes with a bit of Salt & Pepper. I also use Bacon Fat by itself or added with the rendered fat.


Salt & Pepper Ingredients
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper

- 1/4 C Butter
- 1 tsp of Savory & Aleppo Pepper
- 1/4 tsp Chervil or Parsley
- Salt & Pepper to taste

- 1 Steamer
- 1 Bowl
Ingredients
- 1 lb Baby Potatoes - or regular Potatoes
- To Taste Herbs & Spices - Parsley, Chives, Aleppo, Pepper etc…
Papa Johns Garlic Sauce
- 1/4 C Butter
- 1/4 C Sunflower or Neutral Oil
- 1 1/4 tsp Garlic Powder
- 1/2 tsp Butter Popcorn Seasoning
- A Pinch Citric Acid - About 1/4 of 1/8 tsp, very small amount
Instructions
- Place water into the Steamer and set on max heat while you prepare the Potatoes.
- Wash the New Potatoes well and chop the larger ones in half so that they are all roughly the same size or wash and dice regular Potatoes, Peeled or not.
- Steam for about 15-20 minutes depending on size. Check softness at 15 minutes by piercing. It should go through very easily.
- Prepare Garlic Butter Sauce while the Potatoes are steaming. Microwave for a bit to blend. Add in any Herbs & Spices desired such as Parsley, Chives, Aleppo or Chili Flakes or save it for garnishing.
- When the Potatoes are done, lift the basket away and let air dry for a few a minute or so. Combine the Potatoes & Garlic Butter Sauce into a Bowl and gently toss. Leave them there to soak.Toss again before serving and Season with Salt & Pepper to taste. Garnish it with Parsley & Aleppo or other Herbs and Spices.
