JAHZKITCHEN Yellow Relish Burger with Cheese

Enjoy a JAHZKITCHEN Relish Burger made with a homemade relish, and not just one kind either. Top your burger off with a White Relish (Mayo), Red Relish (Ketchup or Chili Sauce), or a Yellow Relish (Mustard). It’s the Pickled Cucumbers that make these relishes not only unbelievably good. You can make it right on the spot once the pickled cucumbers are ready. These relishes work just as well on hot dogs or sausages.

Relish Burger Ingredients

Ground Beef Patties, Hamburger Buns, Butter, Relish (Refrigerator Pickled Cucumbers, Onion, choice of Mayonnaise for white relish, Ketchup, or chili sauce for Red Relish, Yellow Mustard for Yellow Relish).

You first need burger patties, and these can be store-bought or homemade using ground beef. I make mine using the below Burger mixin and sometimes include a bit of chopped beef suet for extra beefiness whenever using lean ground beef. Place them on a baking sheet once these are portioned and shaped, to freeze.

Use for every 1 lb (ca. 454 g) of very cold ground beef to mix in gently, portion & shape.
  • 1 tsp Beef Powder
  • 1/2 tsp MSG
  • 1/4 tsp Baking Powder

For something different, I shaped the burger patties using a 5-inch lid and 90 g of meat per patty. These are thin and wide burgers only requiring a 2-3 minute sear on each side. I also added about 1/2 tsp of onion powder and only 1/8 tsp of baking powder.

Buttered & Toasted Hamburger Buns

The very first step in cooking hamburgers is buttering and toasting the hamburger buns. After the buns are toasted, set them aside and start searing the burger patties straight from frozen.

Seared Burger Patties

In general, sear the burgers in a hot skillet over medium heat for about 3-5 minutes per side depending on the size, or until the juices run clear. For these 5-inch-wide, thin, 90 g burger patties, only 2-3 minutes per side was needed.

Salt & Pepper Blend

This Salt & Pepper blend is what is used to season the burger patties either before or after searing. It’s easy enough too; just combine the following ingredients together in a small bowl and use to season the burgers. A bit of onion powder can be added too, adding onion flavor to the burger patties. As well as a bit of MSG to bring out more savoriness.

  • 1 Tbl Sea Salt
  • 1 tsp Black Pepper
  • 1/2 tsp White Pepper

Relish Burger Types

Now we get into the Relish of it, and there are three types of relishes you can enjoy for the Relish Burger. Even a Trio Sauced Relish Burger that uses 1 type of relish with a certain sauce, then uses the other 2 sauces by themselves on the bottom burger bun.

I make the relish with 3 parts finely diced refrigerator pickles and 2 parts finely diced onions. From there, I add ketchup, mayonnaise, or yellow mustard to create different relish variations. If I want a touch of sweetness, similar to a sweet relish, I add sugar to taste.

It’s the seasoning used to make the pickled cucumbers that carries over to the relish, creating such a beautiful and elegant flavor.

Red Relish Burger

The Red Relish Burger adds 2 parts ketchup or Heinz chili sauce to the base relish of pickled cucumbers & onions.

Old Style Red Relish Burger

There is another red relish known to be used on burgers that seems very hard to get now. A homemade blend of Red Relish is still up on our website. I now forgo this in favor of this Red Relish. But even still, a bit of sugar can be added to derive the same sweetness, entirely preferential. This was an old post I had called the Red Relish Burger, and it most likely will be removed at some point in favor of this Relish Burger recipe.

White Relish Burger

The White Relish Burger adds 2 parts mayonnaise to the base relish of pickled cucumbers & onions.

The liquid within the pickled cucumbers breaks the emulsification of the mayo; this isn’t really a big deal, and I use it just the same. However, if you are looking for the mayo to be a bit thicker, then squeeze the juices out from the pickled cucumbers and then add them to the mayo along with the onions. Dehydrated onions can also be used as well and will soak up any excess liquids.

The Yellow Relish Burger adds 2 parts yellow prepared mustard to the base relish of pickled cucumbers & onions.

Trio Sauced Relish Burger

The Trio Sauced Relish Burger uses all three sauces, well, sort of. One type of relish is used, either red, white, or yellow. Then the other two sauces are placed on the bottom bun without the pickled cucumbers or onions, just the sauce as is.

Although that would be interesting, say 2 tsp each of Ketchup, Mayo, and Mustard with 3 Tbl of pickled cucumbers and 2 Tbl of finely diced Onions to make a Trio Sauced Relish Burger. Or maybe a relish on the crown topped with a bun. Another relish on the patty and topped with another patty. So that the bottom bun can take on the third relish for all three relishes in one Ultimate Relish Burger.

Relish Burger Toppings

The only topping on a Relish Burger is relish, optionally with either ketchup, mayo, or mustard. However, you can stack these up with additional toppings as you see fit. Your classic burger toppings are cheese, bacon, lettuce, tomatoes, onions, and pickles. But we already got the onions & pickles in the relish.

Burgers & Fries

Heat up the deep fryer and fry the fries 2 times. Once until most of the steam is gone and a second fry until there is no longer any steam coming from the fries. Then hold them there until the burgers are ready and fry them again just a few seconds to heat through and give a final crisping before plating with the burgers.

You can season the fries right after they come out too. Use Cajun or Creole seasoning or rotisserie seasoning, or stay with the classic salted fries. Maybe with a bit of pepper added. The image below uses a CAJAHN seasoning, a blend I am working on and fine-tuning.

Ingredients

  • 4 Hamburger Buns - buttered
  • 4 Hamburger Patties

Relish

  • 3 Tbl Pickled Cucumbers - finely diced
  • 2 Tbl Minced Onion
  • 2 Tbl Choice Sauce - Ketchup or chili sauce for Red Relish, mayonnaise for White Relish, or prepared mustard for Yellow Relish
  • To taste Sugar - for added sweetness

Instructions

  • Relish: Prepare the relish of choice by combining the pickled cucumbers & onions with the choice sauce. Set aside until needed.
  • Toasted Buns: Heat the skillet up over medium heat and toast the hamburger buns. Meanwhile, remove the burger patties from the freezer and set aside.
  • Seared Burgers: After toasting the buns, the pan will be ready to start searing. Place the burger patties in and season with salt & pepper. Sear anywhere from 3 to 5 minutes per side, depending on thickness, or until the juices run clear.
  • Assembly: Place the patty on the bottom bun and top the crown with relish to serve right away or wrap and hold until ready to serve.
    Optionally include sliced tomatoes, onions, or lettuce on the bottom bun, or cheese on the patty itself, followed by bacon if using. You can also include ketchup, mayo, or mustard on the bottom bun before setting the patty on top.
