This is a simple Pizza Sauce, heavy with Thyme. Offering up an earthy, citrus, slightly peppery flavor. Normally, Basil & Oregano are the flavoring herbs for Pizza sauce. Basil & Oregano are still present, but Thyme is the star of this Pizza Thyme Sauce, it’s in the name. It’s those flavors that Thyme adds that we concentrate on. Optionally, with a bit of Parmigiano Reggiano. Use it as a Dipping Sauce too.
Thyme is the main Flavor. In particular, ground Thyme and a good amount of it. It offers up those unmistakable flavors and colors the pizza sauce a deeper, richer red. A bit of it isn’t going to do, you need a lot of it to really bring out the flavors and make it noticeable. This recipe uses a good amount of it, and you could go with more.
Pizza Thyme Sauce Ingredients
Passata, Oil, Sea Salt, Garlic, Ground Thyme, Basil, Oregano, Black Pepper, and Aleppo or Red Chili Flakes.
Optionally, with a splash of Lemon Juice or Red Wine Vinegar for acidity and Parmigiano Reggiano if desired. Sugar can be added for sweetness.
Thyme
Thyme is earthy, minty and citrusy. It’s savory, but also sweet and slightly peppery. Thyme is often added to Westernized Pizza Sauce, and for good reason. Its flavor profile pairs really well with Tomatoes & Basil. However, it’s added in small amounts, and it’s only when we really load up on the Thyme, that the flavors just burst. For this recipe, we really make it the focal point, using 2 tsp to really hit with those Thyme Flavors using ground Thyme. Add more according to taste, if desired.
Passata
Use Passata as the tomato base. A good brand is Mutti Passata. But even cheaper brands are good. You just might have to adjust it a bit, is all. Use a splash of Lemon Juice or Red Wine Vinegar to give you the desired acidity, or added Sugar for sweetness.
Pizza Thyme Sauce Adjustments
The Pizza Thyme sauce is incredibly easy to make. Just combine all the ingredients together and mix well. Adjust the flavor how you see fit.
- For a bit of acidity, add either Red Wine Vinegar or Lemon Juice.
- If a Sweeter Pizza Sauce is desired, add sugar to taste.
- Adjust the heat too with either Black Pepper or Aleppo/Red Chili Flakes.
- Want that Parmesan & Thyme Flavor, add some Parmigiano Reggiano or use it on top of the Pizza after coming out of the oven.
This Pizza Thyme Sauce was used to make the Calzones & Pizzas you see below, using the Overnight Pizza Dough.

Ingredients
- 1 bottle Passata - 680 ml
- 3 Tbl Oil - EVOO or Neutral Oil
- 2 tsp Ground Thyme - or more
- 1 tsp Sea Salt, Oregano, Basil - each
- 1/2 tsp Black Pepper - or more
- 1/4 tsp Aleppo Chili Flakes - or 1/8 tsp Red Chili Flakes
- 3 Cloves Garlic - Minced
- As Desired Red Wine Vinegar or Lemon Juice - Optional for added acidity
- As Desired White Sugar - Optional for added sweetness
- As Desired Parmigiano Reggiano - Optional
Instructions
- Add all the ingredients together and mix well. Adjust the flavor how you see fit. Cover and refrigerate until ready to make Pizzas or Calzones.
