Best of all, since Oven Fries don’t use lots of Fat or Oil, compared to deep frying. You can use superior Fats like Beef Suet to Crisp the Fries up and get the old-fashioned Fry taste. Now them some Fries!
French Fries
Some store bought Fries are just better than others. One such Brand that is probably one of the best out there, offering up a beautiful crisp no matter if it is Deep Fried, Air Fried or Oven Baked is the No Name Crispy Skin-On Restaurant-Style Fries.
No Name Fries
These are absolutely fantastic fries, with a nice crispy exterior and good color.
Serving Size for Fries
A serving size of Fries is about 114g or 1/4 lb of Fries. But can vary depending on where the Fries are being used. Other Fast Food outlets such as McDonald’s serve their Fries in the following sizes;
- Small — 80g
- Medium — 114g
- Large — 150g
Oven Fries Fat
Use a good Fat like Beef Suet, Rendered Fat or Lard. In the case of Lard or other solid Fats, just place in the pan and into the oven while it is preheating just to melt it. Then pour over the Fries to toss. For quick and easy, use a Neutral Oil. About 1/4 C in total is needed to cook up 1 lb (ca. 454 g) of Fries.
Beef Suet
Beef Suet was what McDonald’s and other Fast Food Restaurants use to fry their Fries in, and it offered up incredible flavors.
Measure out 1/4 C and melt to pour over the Fries for Superior taste.
Bowl of Frozen Fries
Weigh out 1 lb of Fries in a steel bowl and add the 1/4 C of Fat, 3/4 tsp Salt & Pepper or just 1/2 tsp of Salt to toss the Fries. Set aside while preheating the oven to 400 F / 200 C. With the rack in middle position.
French Fry Seasoning
Salt & Pepper are the go-to seasoning for fries. Although, there are a bunch of other Seasonings that can be used too. Salt & Pepper can be added to Oven Fries before going into the oven.
Other seasonings blends should be added to the Fries just as they are finishing up, to prevent any burning of the spices. Things like Cajun or Creole Seasoning, Paprika, Onion or Garlic Powder, even Parmesan & Parsley can get tossed in to cook just a minute or so. Drain out any excess Fat if present before seasoning, just to toss and cook for a minute or so.
Salt & Pepper blend
Combine the below ingredients for a basic Salt & Pepper blend and use 3/4 tsp per 1 lb of Fries tossed with Fat before going into the oven.
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Cooking Oven Fries
With the Frozen Fries tossed in Fat, Salt & Pepper and the Oven preheated to 400 F / 200 C. Empty the Fries into a thick bottom Pan and spread out evenly. Transfer to the Oven to cook undisturbed for 15 minutes. It is during this time the Fat will heat up and start crisping the Fries. Afterward, toss the Fries to recoat in Fat every few minutes to ensure Crispness and even cook until the Fries are to your liking, about 30 minutes in total.
It’s the frequent tossing and recoating in fat that creates Crispy Oven Fries with an even cook.

Fries tossed in Fat and seasoned with Salt & Pepper. Spread out evenly in the pan to go into the oven.

Excess Fat
After the Fries are cooked crisp, there may be a bit of Fat leftover. Using the same bowl you had the Fries in, place a sieve or strainer on top to empty the Fries in and strain off the excess Fat before serving.
Alternatively, transfer the Fries to a plate lined with paper towel to soak up any Fat before serving.

- 1 Sheet Pan Heavy duty, thick bottom
- 1 Steel Bowl
- 1 Strainer/Sieve or use paper towel to soak up any excess fat
Ingredients
- 1 lb Fries
- 1/4 C Fat - Beef Suet, Rendered Fat, Lard or Neutral Oil
- 3/4 tsp Salt & Pepper Blend
Salt & Pepper Blend
- 1 Tbl Sea Salt
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Instructions
- Place the Frozen Fries into a Bowl, weighing out 1 lb or 454 g. Add 3/4 tsp of the Salt & Pepper blend and toss the fries to coat all of them in Fat.If the Fat is solid like Beef Suet or Lard, place the fat into the pan in the oven while it is preheating to melt the fat. Then pour over the Fries in the bowl to toss.
- Preheat the Oven to 400 F / 200 C. with the oven rack in middle position. Empty the Fries into a sheet pan, spread out evenly and place into the oven. Let it cook 15 minutes undisturbed.
- Toss the fries around, recoating them in the Oil. Back into the oven for 5 minutes. Then every few minutes, toss to recoat, for a total cook time of 30 minutes or until crisp to your liking. If there are additional seasonings going on the Fries, add them in when the Fries are crisp to your liking, strain out excess fat first. Add the seasoning and toss, place back into the oven just for a minute or so.
- With the same bowl you had the Fries in, place the strainer or sieve on top and empty the Fries into the sieve to drain off any excess fat. Optionally, plate on paper towel to soak up any excess Fat. Serve right away.
