Beautiful Crispy Oven Fries ready in about 30 minutes. Season them with a Salt & Pepper blend or other seasoning for different flavors. Best of all, since Oven Fries don't use lots of Fat or Oil, compared to deep frying. You can use superior Fats like Beef Suet to Crisp the Fries up and get the old-fashioned Fry taste. Now them some Fries!

1 Sheet Pan Heavy duty, thick bottom
1 Steel Bowl
1 Strainer/Sieve or use paper towel to soak up any excess fat
Ingredients

1/4CFat - Beef Suet, Rendered Fat, Lard or Neutral Oil
3/4tspSalt & Pepper Blend
Salt & Pepper Blend
1TblSea Salt
1tspBlack Pepper
1/2 tspWhite Pepper
Instructions
Place the Frozen Fries into a Bowl, weighing out 1 lb or 454 g. Add 3/4 tsp of the Salt & Pepper blend and toss the fries to coat all of them in Fat.If the Fat is solid like Beef Suet or Lard, place the fat into the pan in the oven while it is preheating to melt the fat. Then pour over the Fries in the bowl to toss.
Preheat the Oven to 400 F / 200 C. with the oven rack in middle position. Empty the Fries into a sheet pan, spread out evenly and place into the oven. Let it cook 15 minutes undisturbed.
Toss the fries around, recoating them in the Oil. Back into the oven for 5 minutes. Then every few minutes, toss to recoat, for a total cook time of 30 minutes or until crisp to your liking. If there are additional seasonings going on the Fries, add them in when the Fries are crisp to your liking, strain out excess fat first. Add the seasoning and toss, place back into the oven just for a minute or so.
With the same bowl you had the Fries in, place the strainer or sieve on top and empty the Fries into the sieve to drain off any excess fat. Optionally, plate on paper towel to soak up any excess Fat. Serve right away.
