What an Amazing Snack this is just to have on its own when you’re in the mood for Pineapple or as a side dish with grilled meats. This Grilled Pineapple Recipe is just too good that you will come back to this from time to time.
I also make this recipe when I need the Skins or Trimmings from Pineapple but not necessarily the meat for other recipes which I will post soon.
Pineapple
Wash the Pineapple well so you can save the Trimmings and Core for other uses. Trim the Top and Bottom and then trim off the Peel with all the eyes or pits.
Chop into quarters and then Chop the Core out so that you have a mostly flat top for grilling purposes.
Place the Trimmings and Core into a Ziploc bag and freeze to use for other things. Discard the Pineapple Leaves or save them for garnishing.
Grilled Pineapple Seasoning
The Seasoning is what really takes this to the next level.
To me, the taste is just something very unique and special. The Flavors go so well together, consisting of Ground Lemon Grass, Ground Galangal with Lime Leaf.
In the case of this recipe where we are getting a lot of tang or acidity from the Grilled Pineapples I swapped the Lime Leaf for Cinnamon which is a pretty good pairing with Pineapple as it stands, but you can include the Ground Lime Leaf as well if desired or Squeeze Lime Juice over top for that extra kick.
Another way to kick this up is to add a bit of Black Pepper or other heat source for some heat.
Sugar
The Sugar I use is your Standard White Sugar. This can be swapped out with Various Yellow/Brown Sugars.
Cane Sugar or other Coarse cut Sugars, including colored sugars, can be used to garnish.
Preparation
Once you have the Pineapple quarters ready to go and the seasoning combined. Just sprinkle a Generous amount all over the Pineapple. Allow it some time to absorb and season again before placing them unto the Grill unto good grill marks are made – a few minutes and flip to grill the other side. Use up all the seasoning.
I use a Panini Cooker and grill both the Bottom and Top at the same time.
Sauces
This is Good all by itself. However, you can drizzle Caramel over this or serve with some Yogurt on the side or the Pineapple on top of some yogurt so that when you slice down on some Pineapple you pick up some yogurt as well. Plain or Flavored Yogurt can be used.
Grilled Pineapple
These only go on the Grill long enough to create the Grill marks, flipped and heat through.
The featured Image was Pineapple Quarters cooked in a Panini Grill, which creates the Grill Mark on both the Bottom and Top.

Ingredients
- 1 Pineapple
- 1/4 C White Sugar
- 1/4 tsp Lemon Grass - – Ground
- 1/4 tsp Galangal - – Ground
- 1/4 tsp Cinnamon
- Plain or Flavored Yogurt - – Optional
- Caramel - – Optional
- Coarse Sugar or Colored Sugar - – Optional
Instructions
- Wash the Pineapple well. Slice the Top and Bottom off and Slice the Skin off. Save these for other uses or place into a Ziploc Bag and freeze to use at another time along with the Pineapple cores.
- Cut the Pineapple into Quarters and slice the Core out creating a mostly flat surface that can come into contact with the Grill to create the marks.
- Combine the remaining ingredients and Sprinkle all over the Pineapple. Allow some time for the Pineapple to absorb the Seasoned Sugar before Seasoning again. Repeat until all of the Seasoning is used.
- Place unto a Grill and Cook until good grill marks are visible about 3-5 minutes.
- Serve as is or Garnish with Coarse Sugar and/or Drizzle Caramel. Optionally on top of some Plain or Flavored Yogurt.
