Cheese Whiz Sauce! Quick multipurpose Hot Cheese Sauce that can be thrown together in five minutes. This Hot Cheese Whiz Sauce can be used by itself or as a base to take on other forms by adding different types of Cheese or Seasonings.
The Standard Cheese Sauce is made from Béchamel Sauce with Cheese, any kind you’d like. For this recipe, we do something a little different. We use Arrowroot for the thickening because of the Texture it offers, which is perfect for the Cheese Sauce. We use Cheese Whiz as the Cheese source. Optionally, with some help from Cheddar Cheese Powder or Brewers Yeast for undertones.
Tip: Use a spoonful of this cheese sauce or just Cheese Whiz in KD with Butter, Milk and Salt & Pepper.
Cheese Whiz Sauce Ingredients
The base Cheese Whiz Sauce is made with Cream & Water or Milk. With Cheese Whiz, Arrowroot, Oil, Salt, Turmeric, Citric Acid, White Pepper and Seasoning. Optionally with Cheddar Cheese Powder or Brewers Yeast or some shredded Cheese added in for a boost in Cheese Flavor.
Dairy Liquids
You want about 1 Cup of Dairy. This can come from 1/4 C Cream with 3/4 C of Cold Water or just 1 Cup of Milk or Cream. You can also use 1 Cup of Water or Milk with 2 Tbl of Buttermilk or Milk Powder.
The amount of Cream or Dairy used also affects the overall consistency.
Cheese Whiz
Use 1/2 C of Cheese Whiz as the main Cheese flavoring. Add in shredded Cheese such as Cheddar or Monterey Jack to up the Cheese Flavor and get a better Cheese texture.
Arrowroot
Arrowroot is the preferred thickener since it has the ability to thicken into a gluey consistency. Which is what you want for a Cheese Sauce. Cornstarch or Potato Starch will thicken the Sauce, but does not offer the stringy texture sought in a Cheese Sauce.
Add one tablespoon to thicken the Cheese Sauce. Add a bit more if you seek a thicker consistency, about 1 tsp more or so.
Oil
Add Neutral Oil to blend the flavors and give the Cheese Sauce some sheen. Exchange with Butter, Lard, or Bacon Grease.
Salt
Add 1/2 tsp of Sea Salt to lift the flavors. Exchange with Butter Popcorn Seasoning to give the Cheese Sauce a boost in Butter flavors, which works really well with Cheese. This also affects and improves the overall color.
Turmeric
Added to improve the Color of the Cheese Sauce.
Citric Acid
Add a small amount of Citric Acid to lift the flavors and give some tang. Add 1/4 tsp Cream of Tartar, or use in place of Citric Acid. This will cause the Cheese Sauce to take on a Creamier consistency.
White Pepper
A little heat through White Pepper. Alternatively, use Cayenne Pepper or Black Pepper.

- 3/4 C Water
- 1/4 C Cream (10%)
- 1/2 C Cheese Whiz
- 1 Tbl Arrowroot & Neutral Oil
- 1/2 tsp Sea Salt
- 1/4 tsp Turmeric, Onion & Garlic Powder
- 1/8 tsp Citric Acid & White Pepper
With Cheddar Cheese Powder
This is the Base Cheese Whiz Sauce with 1 Tbl of Cheddar Cheese Powder added. It improves the Color while adding extra Cheese Flavor.
Cheese Whiz Sauce Consistency
You may want to adjust the consistency to get a thinner or thicker Cheese Sauce.
To thin it out, simply add more liquid after it has thickened while simmering.
To thicken, mix equal amounts of Arrowroot & Water (about 1 tsp or more). While the Cheese is hot, add the slurry until thickened to your liking while mixing. Another option is to just add in 1 Tbl + 1 tsp or more of Arrowroot at the start and add more liquid once it has thickened to thin it out if needed.
For a Cheese Sauce that will go over a Poutine, 1 Tbl of Arrowroot is pretty good. For a Nacho Cheese Sauce, you may want to add more arrowroot to get a slightly thicker sauce. Add in 4 tsp of Arrowroot for a Nacho Cheese Sauce or a thicker Cheese Sauce.

Cheeseburger Poutine
Add in 1/4 tsp of Dry Mustard for the Cheeseburger Poutine!
Cheese Nachos
Use the Base Cheese Sauce with 4 tsp of Arrowroot instead of 1 Tbl and use 1/4 tsp each of the below added in for the Nacho Cheese Sauce.
- Cumin
- Smoked Paprika
- Chili Powder
- Ancho Powder
- Cream of Tartar
Equipment
- 1 Saucepot
- 1 Whisk
Ingredients
- 3/4 C Water
- 1/4 C Cream 10 %
- 1/2 C Cheese Whiz
- 1 Tbl Arrowroot & Neutral Oil - each
- 1/2 tsp Sea Salt
- 1/4 tsp Onion, Garlic, & Turmeric - each
- 1/8 tsp Citric Acid & White Pepper - each
- 1 Tbl Cheddar Cheese Powder - Optional
Instructions
- Combine all Ingredients together into a saucepot and mix really well. Ensure that the Arrowroot is completely dissolved.
- Bring to boil while mixing often until the Cheese Whiz dissolves and the Cheese Sauce is thickened.
- At this point if you want the Sauce thinner add a bit more Cream or Water. If you want it thicker combine 1 tsp of Arrowroot & Cold Water and mix in a small bowl. Then pour it slowly a little at a time while the Cheese Sauce is simmering and whisk into the Sauce until the desired thickness. Remove from the heat once it has thickened.
