Roasted Broccoli is a wonderful side dish that is roasted in the oven at 400F for about 25–30 minutes. Enjoy it simply, with Salt & Pepper to taste, tossed with a bit of Butter & Cream and/or with Freshly Grated Parmesan on top.

Roasted Broccoli Ingredients

For a simple Roasted Broccoli side dish, all you will need is Broccoli, Fat, Garlic with Salt & Pepper to taste.

Fresh Broccoli

Broccoli

Chop Broccoli close to the Florets. About 2 crowns is 1 lb, depending on size. Wash and strain well.

If the florets are large, chop them into smaller bite size pieces.

Sunflower Oil

Fat

Either a Light tasting Extra Virgin Olive Oil or a Neutral Oil like Sunflower Oil.

Bacon and the Grease are amazing with Broccoli.

Garlic

Coarsely Chop a whole head of Garlic. You don’t want the Garlic minced or finely chopped, because it would burn too quickly. A bit chunky to get nicely roasted Garlic nodules.

Salt & Pepper Blend

Salt & Pepper

Combine the below Salt & Pepper blend to season the Broccoli to taste.

  • 1 Tbl Sea Salt
  • 1 tsp Black Pepper
  • 1/2 tsp White Pepper

How to Roast Broccoli

However you decide to serve Roasted Broccoli, it all starts with the simple and basic dish.

  1. Combine 1 lb of Broccoli Florets, 1/4 C Fat, 1 Whole head of Garlic Coarsely chopped with Salt & Pepper to taste in a roasting pan and toss really well so that all the Broccoli gets coated in fat.
  2. Roast at 400 F in middle rack position for about 25–30 minutes, tossing it every so often to prevent burning. Adjust the seasoning if needed.

Roasted Cruciferous Vegetables

Broccoli and other Cruciferous Vegetables are rich in micronutrients, high in fiber, and low in calories.

When Roasting Cruciferous Vegetables, use Olive Oil, Rendered Fats or other types of fat to assist in roasting the Broccoli. The Fat also helps your body more efficiently absorb fat-soluble vitamins (A, D, E, K). Cruciferous Vegetables are a good source of vitamins A, C, E & K.

Asparagus takes about 10–15 minutes to roast, so add these when 10–15 minutes of cook time remain.

Brussels Sprouts

Halved Brussels Sprouts are done about the same time as Broccoli, so they can be included from the start with Broccoli.

Roasted Broccoli With Cheese

Cheeses like the Cheese Whiz Sauce can be ladled over the top, after coming out of the oven, or top with shredded Cheddar or Old Fort White Cheddar Cheese the last few minutes just to melt it. You can even take it out of the oven and immediately to toss in a bowl with Plain or Flavored Cream Cheese at room temp. The Garlic & Herb Cream Cheese is a really good one. But I’d Imagine the Jalapeño Cheddar would be a good one too, for those who like a bit of kick.

Sprinkle Shredded Cheddar or Old Fort White Cheddar Cheese on top to melt a bit before removing from the oven.

Parmigiano Reggiano

Keep it simple, with just a fresh grating of Parmigiano Reggiano Cheese on top after coming out of the oven.

This Cheese Whiz Sauce is ready in about 10 minutes to ladle over Broccoli.

Herb & Garlic Cream Cheese

Herb & Garlic Broccoli

Place the desired amount of Cream Cheese into a bowl to come to room temp. Toss with the Hot Broccoli until it melts.

3-4 Tbl is pretty good for 1 lb of Broccoli. Although, you could certainly add more.

Butter & Cream Roasted Broccoli

Just a bit of Butter & Cream to toss the Roasted Broccoli after coming out of the oven. Taste and adjust the seasoning afterward if needed. Use Real Butter & 10 % Cream.

Bacon Roasted Broccoli

Use about 4 strips or more of Bacon, fried up crisp, and set aside to chop and add back in with the Broccoli when serving. Use the rendered Bacon Grease to roast the Broccoli. If you don’t quite have enough, top it up with Oil to make about 1/4 C worth for 1 lb of Broccoli.

If using previously rendered Bacon grease, place it into the roasting pan to melt before adding in the remaining ingredients to toss and roast.

  • 1 Roasting Pan

Ingredients

  • 2 crowns Broccoli
  • 1/4 C Oil - Light tasting EVOO, Neutral Oil or Bacon Grease
  • 1 head Garlic - Coarsely Chopped
  • To taste Salt & Pepper Blend

Salt & Pepper Blend

  • 1 Tbl Sea Salt
  • 1 tsp Black Pepper
  • 1/2 tsp White Pepper

Instructions

  • Preheat the oven to 400 F with the rack in middle position.
    Combine into a small bowl the Salt & Pepper blend and set aside.
  • Chop the Broccoli into bite size pieces and close to the florets. Wash and strain well.
    Mix the Broccoli, Oil & chopped Garlic together in a roasting pan and spread out in an even layer. Season with Salt & Pepper blend.
  • Place into the oven and leave for 10 minutes. Then toss the Broccoli around, scraping up the Garlic and tossing and spreading out evenly again every 5 minutes, a bit more so towards the end. A total cook time of about 25–30 minutes. Adjust the seasoning if needed.

Notes

 
It is the frequent tossing that will prevent both the Garlic & Broccoli from burning. Keep an eye on the coarsely chopped Garlic and keep it moving. Scraping it up from the roasting pan and tossing with the Broccoli, so that you get tiny bits of beautiful crisp brown Roasted Garlic.
