Refrigerator Pickled Cucumbers
Start this recipe by preparing refrigerator pickled cucumbers in advance, giving them 24+ hours to fully develop their flavor. In just about 10 minutes, you can have them ready. Once done, these pickles are always on hand, allowing you to whip up fresh on the spot relish in minutes whenever you need it.

Onions
Any type of Onion will work here, and depending on what you are after, can influence your choice of Onions. Use your standard Yellow Onions for an all around option. White Onions are great for sharpness and a stronger onion taste. Red Onions can be used for a less pungent and sweeter taste. Even a bit of Green Onions, Shallots, Garlic, and/or Peppers can be added.
Relish Addins
As mentioned previously, outside the type of Onions you can use, is the addition of Bell Peppers, Garlic, and Shallots should you choose. Other ingredients may include Chilies or Pickled Jalapeños, Tomatoes, Apples, Pears, Celery. It’s a simple enough recipe, so feel free to experiment.
Relish Ratio
The ratio for this style of on the spot Relish is;
- 3 parts or 3 Tbl of diced Pickled Cucumbers
- 2 parts or 2 Tbl of diced Onions
- 2 parts or 2 Tbl of your Base sauce.
- Whether that be Mustard, Ketchup/Chili Sauce, or Mayonnaise.
Base Sauce
Use Ketchup, Mustard, or Mayonnaise as the base sauce. Which determines the Relish type: Red, Yellow, or White. It’s that simple and easy!
Yellow Relish
Uses Yellow Mustard as the base sauce, with diced pickled cucumbers and onions.
Red Relish
Uses French’s Ketchup or Heinz Chili Sauce as the base sauce, with diced pickled cucumbers and onions.
White Relish
Uses Hellmann’s Mayonnaise as the base sauce, with diced pickled cucumbers and onions.
Sweet Green Relish
I want to try out a Sweet Green Relish, and I am thinking Green Peppers added, and a lot of sugar for this. Perhaps the Sugar cooked a bit, just until syrupy, but no browning. Left to cool, with a bit of water added if needed to adjust the consistency. Possibly do this for a Sweet Red Peppers or a Sweet Yellow with Yellow Bell Peppers, Maybe an Orange one too, I think that would be really cool. If I ever get around to this, I’ll post it here.
Hot Relish
There are other hot ingredients you can add to the base sauce to derive some heat, such as Jalapeños, Sriracha, Hot Sauce, Chili Flakes, or Hot Horseradish. With the base in place, you really are free to experiment with all kinds of other things added in.

- 2 part Onions - chopped
- 2 part Base Sauce - Mustard, Ketchup, or Mayonnaise

- Combine all the ingredients into a small glass jar and mix well. Cover and refrigerate.
