Special Garlic Lemon Pepper Sauce
The Special Garlic Lemon Pepper Sauce itself is made up of Special Garlic Sauce, Lemon Juice and Lemon Pepper. First prepare the Special Garlic Sauce. Then use the following for every 1 lb (ca. 454 g) of Chicken Wings, or about 10–12 pieces.
- 1 Tbl Special Garlic Sauce or more
- 1/2 Tbl Lemon Pepper or more
- 1 tsp Lemon Juice or more
How to Deep Fry lemon Pepper Wings
Deep Fry the Chicken Wings 1 serving at a time (1 lb (ca. 454 g) or 10-12 pieces). If you have a dual basket fryer, then one serving per basket.
Deep Fry for 10 minutes, then lift the out for a few minutes. Deep-fry a final 2 minutes when the oil is at its hottest. This will crisp the wings up better and promote good color.
How to Sauce Lemon Pepper Wings
Place the sauce for 1 serving of Wings into a stainless steel or glass bowl and add 1 serving of Wings fresh out of the fryer, with excess grease strained off. Toss around for even coverage, and repeat for each additional serving of Chicken Wings.

Ingredients
- 1 lb Chicken Wings - 10–12 pieces
- 1 Tbl Cornstarch
- 1/2 tsp Flour
- 1/4 tsp Baking Soda
Lemon Pepper Sauce
- 1/2 Tbl Lemon Pepper - or more
- 1 Tbl Special Garlic Sauce - or more
- 1 tsp Lemon Juice - or more, optionally serve with Lemon Wedges
Instructions
- Dusted Wings: Place the Wings into a bowl and add the Cornstarch, Flour, and Baking Soda. Toss well for even coverage and set aside while you preheat the fryer to 350F-375F.
- Special Garlic Sauce: Prepare the Special Garlic Sauce and set aside.
- Deep Fry: Place the Wings into the fryer and deep-fry for 10 minutes. Shake the basket well so that any pieces that stick together will come loose. Any stubborn pieces can be separated using tongs. After 10 minutes, lift the basket up and let rest for 2–3 minutes, or until the Oil reaches temp again. Lower the basket in to deep-fry a final 2 minutes. Lift the basket up and shake any excess grease off.
- Lemon Pepper Wings: Add to a bowl the Lemon Pepper Sauce ingredients and empty the Wings in. Toss well with tongs for even coverage. Plate and optionally garnish with Parsley & Lemon Wedges.
