1tspLemon Juice - or more, optionally serve with Lemon Wedges
Instructions
Dusted Wings: Place the Wings into a bowl and add the Cornstarch, Flour, and Baking Soda. Toss well for even coverage and set aside while you preheat the fryer to 350F-375F.
Special Garlic Sauce: Prepare the Special Garlic Sauce and set aside.
Deep Fry: Place the Wings into the fryer and deep-fry for 10 minutes. Shake the basket well so that any pieces that stick together will come loose. Any stubborn pieces can be separated using tongs. After 10 minutes, lift the basket up and let rest for 2–3 minutes, or until the Oil reaches temp again. Lower the basket in to deep-fry a final 2 minutes. Lift the basket up and shake any excess grease off.
Lemon Pepper Wings: Add to a bowl the Lemon Pepper Sauce ingredients and empty the Wings in. Toss well with tongs for even coverage. Plate and optionally garnish with Parsley & Lemon Wedges.
Notes
If doing more than 1 lb (ca. 454 g) of Wings, then work with 1 serving (10-12 pieces), at a time, and repeat adding in another serving of Special Garlic Lemon Pepper Sauce into the bowl for each additional serving to toss.
