This Chicken Salad Sandwich recipe uses my Poly Seasoning to make the sandwich. Which is not yet available. For those of you who do have it or are testing it. Below is the recipe.
This makes a beautiful Chicken Salad Sandwich that can hit the spot. Serve with some chips and/or dip on the side. It is also an excellent side with soup by itself or grilled panini-style.
Sandwich Platter or Double Decker
It is one of the sandwiches that I use for a Sandwich Platter. Along with Egg Salad and Ham Sandwiches. A very cool idea is to double stack the sandwich. Make your Sandwich as you normally would. Then add Egg Salad or Ham on the Top. Place another slice of bread on top for a Double Decker Sandwich.
Homemade Canned Chicken
To make this from Real Chicken Breast. Brine the Chicken Breast (Optionally use JAH Poultry Brine) for the night. The next day, bake or steam and run it through the food processor to break up or Dice Small/Shred and make according to the recipe. You can do the same thing with a Turkey Breast.
Add-Ins for Chicken Salad Sandwich
Optionally add in Celery, Onions, Cheese, Bacon, Tomatoes, Cucumbers, Lettuce, Spinach, Peppers, Jalapeños, Radish, Horseradish, etc…
Try it on English Muffins, Croissants, Sourdough Bread, Tortilla or Pita Bread, Crackers!
Ingredients
- 1 can Flaked Chicken - – or equivalent in Chopped Chicken Breast
- 2 Tbl Mayo
- 1 tsp JAH Poly Seasoning
Instructions
- Combine Poly Seasoning with Mayo and Mix
- Add Mayo to the Chicken in a bowl and mix well.
- Scoop out half the mixture for each sandwich with the bread buttered.
- Cut into halves or 1/4 and serve or wrap in plastic for later
