The Canadian Hawaiian Pizza or HKN Pizza for short code is a Pizza combining Ham or Bacon with Pineapple. It originates out of Ontario, Canada in the early 1960s. Although for some reason I seem to remember growing up always having both Ham & Bacon with Pineapple, and so make it this way to this day. It’s a controversial pizza, with some stating pineapple does not belong on pizza. I still enjoy a Good Hawaiian Pizza and enjoy this combination of Pizza Toppings every once in a blue moon. For me though, it’s got to have both Ham & Bacon. You can also spice it up with some added Jalapeños.
Makeline Pizza Topping Codes
Your typical make line in a Pizzeria contains the following Pizza Toppings, and all of these have codes within the software that is used to display at the make line with what to top the pizza with. I believe the codes below are for Domino’s Pizza, but could be a mix of Pizzerias. Either way, the below illustrates the use of short codes for topping a pizza and is what JAHZKITCHEN uses to describe our Pizza. Such as PKS for the Pepperoni, Bacon, and Italian Sausage Pizza.
The ordering of the toppings is how they are placed on the Pizza. Starting with flat toppings first, followed by bulkier toppings as you go. I go with Cheese last, but you can place this down first if you want the toppings on last.

Canadian Hawaiian Pizza Ingredients
Overnight Pizza Dough, Pizza Thyme Sauce, Ham, Bacon, and Pineapple, Mozzarella Cheese.
Overnight Pizza Dough
Prepare in advance the Overnight Pizza Dough at about the same time you plan on cooking the pizza the next day. The recipe for the overnight pizza dough will also show you how to hand stretch and toss the pizza in preparation for topping.
While usually made with All Purpose Flour with a bit of Gluten Flour. Better results are achieved with Caputo 00 flour. For this Pizza, I went with a 280g portion of dough.
Pizza Sauce
There are all kinds of Pizza Sauce you can use, but perhaps the most simple and standard is the Passata Pizza Sauce. Prepare this in advance along with your toppings and cheese to have everything ready to go. For this Pizza, I went with the Pizza Thyme Sauce.

Canadian Hawaiian Pizza Toppings
Ham, Bacon, and Pineapple are used to top the Canadian Hawaiian Pizza. Use Pineapple Bits and thinly sliced Ham, sliced into triangles. Although you could cube or julienne the Ham too. Mince about 3–4 strips of Bacon and cook in a pan over medium heat until slightly crispy. Drain out the Bacon grease to reserve for other recipes.

Mozzarella Cheese
Just a good Mozzarella Cheese like Saputos can be used here for the Pizza. But even better is the 3:1 Mozza to Provolone Cheese blend I call Pizzeria Cheese. This is a phenomenal Pizzeria Cheese that provide a beautiful melt and flavor to the Cheese.

Pizzeria Cheese Blend
Run through a food processor the Mozzarella Cheese and place 3 C of it into a Freezer bag and the remaining mozzarella cheese into another freezer bag to freeze. Then run the provolone cheese in the food processor and place 1 C in with the 3 C of Mozzarella Cheese. The remaining Provolone cheese into another separate freezer bag to freeze. Toss the Mozza & Provolone Cheese blend to mix thoroughly and freeze. Use this blend to top your pizzas, straight from the freezer.

Canadian Hawaiian Pizza Assembly
Hand Toss the Pizza Dough and place on a pizza screen. Sauce with the desired amount of Pizza Sauce. Top with Ham, Minced Cooked Bacon, and Pineapple bits. Follow with Cheese and transfer to a preheated oven using the PIE/413 Cook method.

413 Pizza Cook Method
This is the best way to cook pizza at home using an oven that results in Homemade Pizza coming out like they were ordered from take out. The How to Cook Pizza article walks you through everything and is summarized below.

Ingredients
- 1 Overnight Pizza Dough - Small, Medium, or Large
- Pizza Thyme Sauce - or other choice pizza sauce
- Ham - Triangular slice, diced or julienne
- 3-4 Slices Bacon - Minced and cooked until lightly crispy
- Pineapple Bits
- Mozzarella Cheese - or the 3:1 Mozza & Provolone Cheese Blend
Instructions
- Preparation: The day before, around the same time you plan on cooking the pizzas the next day, prepare the Overnight Pizza Dough and the Passata Pizza Sauce. Your toppings can also be prepared in advance and refrigerated, with the shredded Cheese placed in the freezer.
- Preheat: Preheat the oven to the highest setting it will go. Position the first rack at the very bottom with a pizza stone and the other rack in the middle position. Preheat for at least 1 hour.
- Assembly: Prepare the pizza dough and place on a pizza screen to assemble with; Pizza SauceHamBacon PineappleMozzarella
- 413 Pizza Cook Method: 4 Minute Cook: Transfer the prepared pizza to the oven on the middle rack to cook for precisely 4 minutes. 1 Adjustment: Immediately place the oven on broil. Remove the pizza from the screen to place directly on the pizza stone. Flip it around so that the front is now facing the back.3 Minute Broil: Broil for 3 minutes. Set the oven off of broil and back to the highest setting. Then transfer the pizza back to the pizza screen and remove. Repeat for each pizza.
