The Original Arch Deluxe was a hamburger sold by McDonald’s in 1996 until 2000. Boasting a quarter pound of beef on a split-top potato flour sesame seed bun, topped with leaf lettuce, sliced tomato, American cheese, onions, ketchup, and Dijonnaise (a mix of Dijon mustard and mayonnaise) sauce. The Bacon Arch Deluxe Burger had a circular piece of hickory smoked black peppercorn bacon. While no longer on the menu, there are a some of us who really enjoyed this burger and with this Homemade Arch Deluxe recipe, it can be made any time the craving hits.
McDonald’s announced a couple of years ago that they will be releasing a new version of the Arch Deluxe in Canada, called the Big Arch starting August 27, 2024.
If you’re in the mood to have this burger without all the work, simply order a quarter pounder with bacon & cheese. Add Ketchup, Tomato, Lettuce, and Onions. Then, when you get home, mix Dijon mustard with Mayonnaise and a little black pepper. About 1 Tbl of Mayo to 1/2 tsp of Dijon, done and enjoy.
Arch Deluxe Ingredients
Potato Hamburger Buns, Butter, Ground Beef Patties, Ketchup, Cheese, Tomato, Dehydrated Onion, Lettuce, Arch Deluxe Sauce (Mayo & Dijon Peppercorn Mustard or Brown Mustard).
Hamburger Patties
For the Patties themselves, check out my post on how to make burgers, which will walk you through making the quarter pound patties used for this recipe. Place them on a baking sheet to freeze. You can also opt for premade frozen burger patties. Either way, you want to use 1/4 lb or 114g Burger Patties.
Burger Mixin
- 1 tsp Beef Powder

Hamburger Seasoning
The Hamburger seasoning is the 86/14 Salt to Black Pepper used by McDonald’s. However, I find for added flavor the below Hamburger Seasoning to be really good and use this on the fries too.

Hamburger Seasoning
- 1 Tbl Sea Salt
- 1/2 Tbl MSG
- 1 tsp Black Pepper
- 1/2 tsp Onion Powder
Hamburger Buns
The McDonald’s original Arch Deluxe Burgers were served on potato roll style hamburger bun with a split and sesame seeds. These are really difficult to find, so I use either the Brizzolio Buns which feature that split in the crown or just Sesame hamburger buns.
Butter and toast the buns in a skillet over medium heat. After the Buns are toasted and set aside, the skillet is ready to start searing.
Arch Deluxe Sauce
The original Arch Deluxe sauce uses a mayo base blended with Dijon peppercorn mustard. You can also use brown mustard. Because Dijon peppercorn mustard can be difficult to find, choose a good-quality Dijon mustard instead. Especially one with visible speckling throughout. Use a 6:1 ratio of mayo to mustard.

Arch Deluxe Burger Toppings
The toppings that go on an Arch Deluxe Burger are: Ketchup on the bottom bun, and on the crown: Arch Deluxe Sauce, Onion, Lettuce, Tomato, Cheese Slice.
For a Bacon Arch Deluxe Burger, place cooked crispy peppercorn bacon on top of the cheese slice.

Peppered Bacon
This was a hickory smoked round bacon, almost like a Canadian Bacon with crushed Black Peppercorn. For this, I just cook bacon in the oven with crushed black peppercorn over it until crispy. Easy enough too, just place the hickory smoked bacon on a baking sheet, sprinkle over crushed black peppercorn and place into the oven. Then turn on the heat to 400F and wait 13–15 minutes for crispy bacon. Drain off the grease to save for other recipes.

Golden Fries
Serve the original Arch Deluxe Burger with some store bought shoestring fries.
- Heat the deep fryer up to its highest setting.
- Place 1 lb of fries into the two baskets and lower to deep-fry for about 5 minutes.
- Lift the baskets up and leave until the burgers are made.
- Then lower them in to fry a final 1–2 minutes, or until golden in color.
- Lift the baskets up and shake off any excess grease. Empty into a Stainless-steel bowl and season with salt to toss well and serve. You can also use the same seasoning used for the burger patties on the fries.

- 4 Burger Patties - 1/4 lb each
- 4 Hamburger Buns - Potato roll style with split crown or sesame seeds buns
- As Desired Heinz Chili Sauce - or Ketchup
- 4 Sliced Cheddar Cheese
- 1 Sliced Tomato
- 1 Tbl Dehydrated Onion - With 1-2 Tbl of water to rehydrate
- 4-8 Leaves Iceberg Lettuce - torn
- 4-8 Slices Hickory Smoked Bacon - Optional, with Crushed Black Peppercorn sprinkled over the bacon before cooking.
Arch Deluxe Sauce
- 4 Tbl Hellmann's Mayonnaise
- 2 tsp Dijon Peppercorn Mustard - or Brown Mustard or Original Dijon
Burger Seasoning
- 1 Tbl Sea Salt
- 1/2 Tbl MSG
- 1 tsp Black Pepper
- 1/2 tsp Onion Powder
Instructions
- Preparation: Prepare the hamburger patties, weighing out 114g or quarter pound per patty, and place on a baking sheet to freeze. Optionally, use premade frozen burger patties. Place 1 Tbl of dehydrated onions in a small bowl with 1-2 Tbl of water and set aside to rehydrate. When ready to use, squeeze out all the juices.Combine the Burger seasoning ingredients together and set aside. If making with bacon, sprinkle crushed black peppercorn over the bacon on a baking sheet. Place the sheet of bacon into the oven and turn the oven on to 400F to cook the bacon for about 13–15 minutes. Drain out the grease and save for other recipes.
- Hamburger Buns: Butter and toast the Hamburger Buns over medium heat and set aside. Place Hienz Chili sauce or Ketchup on the bottom bun.
- Sear: Season the Burger patties before or after and sear the Burger Patties for about 2–3 minutes per side or until the juices start to run clear. Transfer and place on the bottom bun on top of the ketchup.
- Assembly: On the Top crown Bun, place in the following order. Arch Deluxe SauceRehydrated Onions: Juices squeezed outLettuce LeafSliced TomatoOptional: Bacon for a Bacon Arch DeluxeCheese SlicePlace the hamburger patty on top of the bottom bun with the ketchup and flip over to complete the burger. Serve right away, or wrap in waxed paper to hold before serving.
