Preheat the oven to the highest setting.On a cornmeal-dusted surface, flatten the pizza dough out and shape it into a rectangle. Brush generously the bagel wash on the dough. Then cut 6–8 breadsticks.
Twist the breadsticks once while transferring to a pizza screen or pan and bake for 6 minutes. During the last 1–2 minutes, place the oven on broil to promote faster browning.
Transfer the breadsticks to a catch pan with a screen on top and brush with the melted Garlic Sauce covering all the breadsticks.
Transfer the breadsticks to a plate with tongs and season with Everything Bagel Seasoning. Serve them with Dipping Sauce. (Pizza Sauce, Donair Sauce, more Garlic Sauce)
Notes
Depending on how light or dark you want the browning, use a stronger concentration such as 2 tsp of water for dark browning or 3-4 tsp of water for a light browning.The heat and duration it is exposed to the heat also affect browning. Since breadsticks are cooked fairly quickly, a stronger solution is desired for dark browning.
Baked Baking Soda
Place 1/2 C or more of Baking soda on a baking sheet and bake for 1 hour at 250 F. Careful handling this and do not breathe in or get in eyes, it can cause severe irritation. Transfer to a storage container and seal.
