Equipment
1 Food Processor
1 Pot
Ingredients
1CanChickpeas - 540 ml or 19 fl oz
2Ice Cubes - More if needed to create a smooth consistency
2clovesGarlic
1/4COlive Oil, Lemon Juice, & Tahini - each
1tspSalt, Cumin, & Coriander - each
1/4tspCayenne Pepper
Instructions
Place the canned chickpeas in a bowl with water to cover. Rub the Chickpeas between your hands to remove the skins, which will float and can be scooped off and discarded.
Purée the Chickpeas, stopping every once in a while to scrape down the sides. Once the Chickpeas are like a powder or pulse, add the remaining ingredients and continue to purée for 4–5 minutes until the hummus is really smooth, airy & light.Stop every once in a while to scrape the sides down to ensure everything gets puréed smooth. Add more Ice cubes if needed to adjust the consistency.
Adjust seasoning if needed. Scoop out into a serving bowl, garnish how you like, and drizzle more Olive Oil on top. Cover and refrigerate for 1 hour.
Notes
Optionally bring the canned Chickpeas to a boil, reduce the heat and simmer for about 20 minutes or until the Chickpeas are easily mushed. Strain the Chickpeas and remove any bits of skins before emptying into a food processor. This creates softer chickpeas which will purée a bit smoother, but can be skipped. Removing the skins is optional, but does make for a smoother Hummus. So is boiling canned Chickpeas to soften them more.
