2Pork Chops - Fat trimmed off for rendering
2-4TblFat - enough to coat the bottom of the pan
Everything Bagel Seasoning - as desired
Herb & Garlic Cream Cheese - as desired
Salt & Pepper Blend
1TblSea Salt
1tspBlack Pepper
1/2 tspWhite Pepper
Instructions
Trim the Fat from the Pork and chop into small pieces to throw into a skillet over medium low to medium heat and render the fat.
Meanwhile, combine the Salt & Pepper blend and season the Pork Chops.
Once the Fat is golden crisp, discard or Salt & Pepper them for a snack. Ensure there is enough Fat in the pan to coat the bottom, adding more if needed. When the fat is just starting to smoke, place the Pork Chops in and sear.
1/4–1/2 inch, Sear for 2–3 minutes per side.3/4 inch, Sear for 4 minutes per side.1 inch, Sear for 5 minutes per side.Add about an extra minute or so for Bone in. An Internal temp of 145F/63C or higher.
Plate the Pork and let rest 5 minutes before schmearing Cream Cheese on top and serve. Optionally, slice into bite size strips and plate.
Notes
At about 1 inches, it is recommended to sear 3 minutes per side and finish in the oven or reverse sear the Pork Chops. 1/2 inch Boneless Pork Chops can be seared until cooked through. Add an extra minute or so, per side, for bone in.
Reverse Seared Pork Chops
Place 1 inch Seasoned Pork Chops on a broiler pan and into a preheated oven at 300F/150C. Let cook for 30 minutes, or until the internal temperature is 10–15 degrees below your target internal temp.Times will vary depending on the thickness of your Pork Chops. For best results, use a thermometer.When 8–10 minutes of cook time remain, start heating up the skillet with the rendered fat over medium heat.Remove the Pork Chops from the oven when done, and go directly to searing for 3 minutes per side and let rest.
