Pork Chops
Any size Pork Chops, bone in or boneless, can be used. Limit the sear to about 3 minutes per side so as not to burn up the Everything Bagel Seasoning. Then finish in the oven or reverse sear it by cooking the seasoned Pork Chops in the oven until 10–15 degrees away from the targeted internal temperature and then sear for 3 minutes per side or more. You can also just bake them.
With Salt & Pepper or opting to season the Pork Chops with Everything Bagel Seasoning after they have been cooked and while resting, you can sear until the Pork Chops are fully cooked through.
Fat Trimmed Pork Chops
One inch Bone In Pork Chops with the Fat trimmed off to render out. Ensure the Pork Chops are at room temp before cooking.
Rendered Fat
The Fat Trimmings are rendered in order to sear the Pork Chops or as soon as they come out of the oven for reverse searing. For more information, check out my post on Rendered Fat.
Chop the Fat into small pieces and cook over medium low to medium heat until the Fat is rendered out and the bits are crispy brown. Then discard the crackling and use the fat to sear the Pork Chops, three minutes per side. By the Time the fat is rendered out, the pan will be hot enough to start searing. If there isn’t enough fat to coat the bottom of the pan, top it up with Ghee, Lard, Oil and wait until there are wisps of smoke before searing.
Everything Bagel Seasoning
This is my own version of Everything Bagel Seasoning. But any Everything Bagel Seasoning will work. The only thing you need to consider is the amount of Salt in the Everything Bagel Seasoning. Bagel Seasoning typically contains little Salt, depending on the brand. So the addition of Salt & Pepper are needed to season the Pork Chops, especially if they are thicker than 1/2 inch. How much, depends on the brand of Everything Bagel Seasoning. You can always season lightly with Salt & Pepper and then season more afterwards if it needs it.
Salt & Pepper the Pork Chops and let them sit out on the counter to come to room temp before searing and while you render out the fat. You can also season with Everything Bagel Seasoning and refrigerate to allow time for the seasoning to rehydrate, just the same as you would with Montreal Pork Chops. Then take out to rest on the counter to come to room temp before searing.

Other Cream Cheeses can be used too. But your Herb & Garlic is Classic with Everything Bagel Seasoning.
How to Make Everything Bagel Pork Chops
You can season the Pork Chops before or after cooking. Seasoning afterwards, just Salt & Pepper the Pork and cook anyway you like. Then season with Everything Bagel Seasoning and let the meat rest.
Searing Pork Chops
With searing Pork Chops, you want to limit the sear time to about 3 minutes per side. 1 or 2 minutes per side, past that is fine, but you’re pushing for the seasoning to be burned. If your Pork Chops won’t be cooked through within this time, finish in the oven or opt to reverse sear. Thinner Boneless Pork Chops at 1/2 inch or thinner can be seared and cooked through perfectly fine within this time frame.
Render the Chopped Fat in a skillet over medium to medium low heat. If there isn’t enough fat to coat the bottom of the pan, add more fat. Wait till it starts to smoke and add the room temp pork chops to sear. Plate and let rest before spreading Cream Cheese on top and serving.
Seared Pork Chops
1 inch Boneless Pork Chops seasoned with Everything Bagel Seasoning. At room temp and seared for 5 minutes per side.
Reverse Sear Pork Chops
Reverse sear is best for about 1 inch Pork Chops or Bone in Pork Chops. While you can sear 1 inch Boneless Pork Chops until cooked through, I find better flavor is achieved with reverse searing. Transfer the Pork Chops straight from the oven to sear 3 minutes per side.
Season the Pork Chops
Trim the fat away from the Pork Chops and season with both the Salt & Pepper and Maritime Bagel Seasoning.
Chop the Fat into small pieces to render out over medium to medium low heat and use that fat to sear the Pork Chops. Top it up with more fat if needed to coat the bottom of the pan.
Baked Everything Bagel Pork Chops
Bake in a preheated oven at 300F/150C until the desired internal temp is 10–15 degrees away from the target temp. When about 8–10 minutes of cook time remain, start heating up the Skillet over medium heat with the rendered Fat.
Seared Pork Chops
Sear the Pork Chops about 3 minutes per side, or until the target temp is reached. Transfer to a cutting board or plate to rest.
Cream Cheese
Once the Pork Chops have rested, and you’re ready to serve. Schmear that Herb & Garlic Cream Cheese on top and serve. Optionally slice into bit size strips and plate to serve.
Oven Baked Pork Chops
You can just opt to oven bake the Pork Chops too. Anywhere from 375F-425F depending on if you want a bit of a crust on the Pork Chops or just a bit of browning with optimal juiciness. Cook until an internal temperature of 145F/63C. Remove and let rest. Spread that Herb & Garlic Cream Cheese on right before serving.
