A Chourico Kebab Wrap is Portuguese Chourico Kebabs stuffed inside a steamed Pita Bread with an assortment of Vegetables and Chourico Sweet Heat Sauce or other sauces. It's all wrapped up in a pocket like Pita Pit.

1 Mixing Bowl for the Vegetables
1 Rotisserie Unit or the Kebabs can be cooked in the oven or grill.
Ingredients
4Chourico Kebabs
2Pita Breads
1CLettuce
8SlicesCucumber - sliced thick and then quartered
1/2Tomato - Diced
1Shallot - Sliced
1stalkGreen Onion
1/4WholeBell Pepper - diced or sliced into strips
Chourico Kebab Wrap Sauce
1/4CMayo
2tspYellow Mustard
2tspSugar
1tspHot Sauce - or more of Frank's RedHot, Piri Piri Sauce or Sriracha
Instructions
Prepare the Chourico Kebabs into about 1 inch cubes and let marinate overnight, or take previously marinated and frozen Chourico Meat and skewer about 5 pieces unto each skewer.
Place the skewer into a rotisserie at 400 F for 15 minutes, or into the oven at 400 F for 15 - 20 minutes. While the Kebabs are cooking, prepare the Vegetables & Sauce. Once the Kebabs are done, set aside to cool.
Steam the Pita Bread for a few seconds on each side until softened. Open up along the edge about 40 % and separate to create a pocket.
Assemble;Spread some sauce on the bottom A handful of the Vegetables in the middleSalt & Pepper if desiredDrizzle the Sauce over the VegetablesAdd 2 Chourico Kebabs per WrapFold over the top flap and tuck it in and roll tight. Serve right away, or wrap in waxed paper to serve later.
Notes
You can go with any assortment of Vegetables to make the salad part of the Wrap, which may include;
Iceberg Lettuce
Romaine Lettuce
Carrots
Onion, Green Onions, or Shallots
Caramelized Onions
Peppers & Chilies, including Banana Peppers or Pickled Jalapeños
