This is a simple recipe I just got to have every once in a while and have been doing so for forever. It's just Mashed Potatoes, Ground Beef & Onions with Gravy. Sometimes I like to add Corn, like a messy Shepherds Pie. It's such a comforting dinner made in about 30 minutes. The Beef & Gravy are made at the same time you are boiling or steaming the potatoes to make mashed potatoes, and everything is served up hot, for a nice quick meal.
Mashed Potatoes: Prepare the Mashed Garlic & Onion Potatoes recipe or other Mashed Potato recipe. While the Potatoes are boiling on the back burner, prepare the gravy and brown the beef.
Gravy: Place all the ingredients for the gravy into a bowl and mix. Set aside until needed.
Beef: Brown ground beef in a skillet over medium high heat with Onions & Garlic. Empty the Gravy in and mix while bringing it to a boil. Reduce the heat to medium low to keep warm, while you prepare the Mashed Potatoes.
Serving: Use 2 Ice cream scoops of mashed Potatoes per serving and flatten out on a plate. Ladle Beef Gravy over the Mashed Potatoes. Optionally garnish with Parsley and/or Chili Flakes for additional heat.
Notes
Beef Gravy: The Beef Gravy can be any kind of Beef Gravy. In this recipe, Beef Chickpea Gravy is used. Which is quick and easy. But another favorite is Fraser Farms Gravy that is used for the Gravy & Meatballs or the Quebec Brown Sauce. Other types can certainly be used and really comes down to what you may be feeling at a particular time. Add some Corn or Green Peas, even a Frozen Vegetable Mix!
