Hot Dog or Sausage topped with sauerkraut, yellow mustard, and bacon bits. Optionally with ketchup, onion, and cheese served on a steamed or toasted bun. This is a nice Lunch or Snack that can be made up rather quickly with already prepared sauerkraut. While this Sauerkraut Dog is served up as a steamie, you can cook it for a toasted or Toastie Sauerkraut Dog or even both, Steamed & Toasted Sauerkraut Dog. However you cook it, the combination of Sauerkraut, Yellow Mustard & Bacon makes for a delicious bite.

4Hot Dogs
4Hot Dog Buns
1TblFat - Neutral Oil or Bacon Grease

Instructions
Fill the steamer bottom pan with about 1 C of water and set over max heat. When it starts to steam, add the hot dog buns in and steam a few seconds on each side. Flip them over with tongs and remove them to set aside.If the Buns start to shrivel or go wrinkly, you have steamed them too long. Only a few seconds is needed on each side.
Empty the water out of the bottom pan of the steamer. Set over medium heat and add a Tbl of fat. Add the Hot dogs or Sausages and cook until done to your liking, turning frequently.
Transfer them to the Buns and top off with Sauerkraut, Yellow Mustard & Bacon Bits. Serve the Steamies right away. Optionally add Onions directly to the dogs or soak the onions in water and then add or place into the pan and soften with the residual heat before topping the dogs.
Notes
Bacon: If using real bacon, mince the bacon and cook in the pan after steaming the buns until crisp. Drain out the excess bacon grease to save for other recipes and add the Hot Dogs or Sausages to start frying. Otherwise, Bacon Bits used for salads can be used. For Toasties: After transferring the Hot Dogs or Sausages to the Buns, optionally top off with Onions and real bacon if using to place them into a preheated oven at 400 F for 5 minutes. Top with Sauerkraut, Mustard, and Bacon Bits. Spicy Sauerkraut Dogs: Add Franks RedHot Sauce or some Sriracha to spice things up to the desired level of heat. Chili flakes can be added too.
