Ham and Cheese Biscuits! Oh yes, break these open, slather them with a generous pat of butter, and pair with a cozy hot cup of tea or coffee, pure comfort food bliss. This recipe has become a must-make tradition in my kitchen whenever making a Holiday Ham Feast, with a bit of ham reserved just to make a 12 count of Ham & Cheese Biscuits. Although you could use chopped Deli Ham too. These are salty with a bit of sweetness, with savory ham and loaded with cheese. Both Cheese Whiz & Shredded Cheddar Cheese, making them an instant favorite every time

1 Small Bowl & Brush
Ingredients
3CFlour
1/2CLard
3TblCornstarch
3TblSugar
2TblBaking Powder
1TblKosher Salt - or a scant less if using Sea Salt
1/8tspCitric Acid - Optional
1/3CCheese Whiz
1/2CShredded Cheddar Cheese
1/2CHam - or about 80g - minced or finely chopped,
1CWater - or Milk
Instructions
Preheat the oven to 400 F with the rack in top position. Combine the first seven (7) ingredients into a bowl and use a pastry cutter to mix until uniform.
Add Cheese whiz and mix again until evenly distributed throughout. Add Shredded Cheese & Ham and mix.
Add 1 Cup of Water or Milk and mix just until it comes together. Empty out on the counter and knead until it just combines. Try to handle the dough as little as possible. Flatten out to about 1/2 inch and cut the biscuits out with a cutter. Transfer to a baking sheet,
Combine the remaining dough and repeat cutting out the biscuits.
Brush with Milk and place into the oven to bake for 12 minutes. Halfway through, brush with milk again. Optionally, broil just a few seconds for more color. Remove and let rest 20 minutes before serving.
Notes
The Ham can come from chopping a whole Ham down when making Braised Ham, or from Deli Ham. You don't need much, just 80g or so or about 1/2 a Cup of finely minced or chopped ham.
