Pimento Marinade
What an amazing marinade that produces a flavor fork tender Pork and that sauce too, just a powerhouse of flavors. It just has that unique flavor that will have you coming back for seconds. Combine and marinate the Pork for 2+ hours.
- 1/4 C of Oil, Lemon Juice, and Sweet Pimento Paste, hot if you want it spicy
- 2 Tbl JAH Rotisserie Seasoning
- 1 Tbl of Smoked Paprika
Pork
Use Boneless or Bone in Pork Chops about 1/2 inch thick for this recipe. Trim the excess fat off and freeze this to render out for other recipes. Marinated for at least 2 hours, overnight is best.
MARINATED ROTISSERIE PORK SAUCE
Use the marinade reduced to a sauce and drizzle over the cooked Pork or in a small dipping bowl to dip pieces of pork in.
Place the leftover marinade into a sauce pot and bring to a boil. Then lower the heat and simmer until reduced a bit. Double the marinade with half to marinate, and the other half reduced to serve as the sauce, if you prefer.
HOW TO COOK MARINATED ROTISSERIE PORK
There are many ways you can cook the Pork Chops. Oven, Stove Top, Slow Cook, Air Fryer, Pan Sear.
Stove Top Rotisserie Pork
Place the Pork Chops with the marinade into a large sauce pot and add 1/2 C of water. Cover and cook over medium heat for 45 minutes.
You can also add Wine of Beer in place of the water if desired.
Stack & Steam Pork with Potatoes

Place the Pork Chops and Marinade into the bottom pan with 1/2 C of water. Add Chopped Potatoes to the steamer basket. Set the heat to medium and cook for 45 minutes. This cooks up the Pork Fork Tender, reduces the Sauce and steams the Potatoes.
The timing of the steamed potatoes is going to depend on the size you chop your potatoes. I chop medium size potatoes in half lengthwise and then quarter each half of potatoes. Place them into the steamer and check at about 30 minutes. If fork tender, remove to toss with Butter & Herbs. Place the lid back on the bottom pot for the pork chops to finish cooking and the sauce to reduce.

- 2 1/2 " Pork Chops
- 1/2 C Water
Marinade
- 1/4 C Neutral Oil, Lemon Juice, & Sweet Pimento Paste - or Hot Pimento Paste for Spicy
- 2 Tbl JAH Rotisserie Seasoning
- 1 Tbl Smoked Paprika
Instructions
- Combine marinade ingredients together and marinate the pork in the fridge for 2+ hours.
- Place the Pork Chops with the marinade into the saucepan. Add 1/2 C of water and mix.
- Cook on medium heat while covered for 45 minutes. Remove the Pork Chops and reduce the sauce more if needed. Serve the sauce on the side in a small dipping bowl.
Notes
- Place the Pork Chops in the bottom Pan with the marinade along with 1/2 C of water to help steam the potatoes above and to adjust so that the sauce reduces within the 45 minutes it takes to cook this dish.
- Place the Steamer basket on top and add chopped potatoes.
