JAH Donair Kebabs made from Halifax Spiced Donair meat and shaped onto Hom Skewers. One pound of meat will give you 4 Kebabs, which will cook up in about 10 minutes.
This recipe uses JAH Halifax Donair Spice. If you don’t have your hands on this, then the standard online version of donair meat can be used. While not quite as good, it will do the trick.
Forming the Donair kebabs
The real trick to this is forming the Kebabs with a Restaurant look. Which will take some time to achieve.
Place the meat onto the Skewers and shape it so that it is evenly distributed on all sides. Once this is done. Wet your hands and form the desired shapes. I really like the Ripple or Wave effect.
While holding the Kebab, press the side of your thumb down and slightly up, turn the kebab over, and repeat for the other side. It can take some time to get used to the feel of this.
Don’t give up though, even if you can’t achieve that ripple effect on the kebabs they are still just as good, and eventually you will be able to get the desired effect. For now, shape them into a kebab on the skewers the best you can.

Serving Donair Kebabs
These can be served up on Tzatziki Sauce and Red Greek Sauce drizzled over top. Some Rice on the Side and Roasted Vegetables such as Tomatoes, Peppers, and Onions. Other sides can be included such as Hummus, Lettuce, Salads, and whatnot.
These can also be plated with some Donair Sauce and Fries or Placed into a Hot Dog Bun for Donair Dogs. Placed inside Pita Bread or other breads and topped with Diced Onions, Tomatoes, and Donair Sauce. Optionally with Cheese and Lettuce.
Since these are skewered, it leaves room for the Donair Kebabs to be stuffed with Cheese Sticks. Either Stuff into the center or cut one side to open it up a bit and place cheese in the center.



Hom Skewers
These can be picked up at your local Middle Eastern store for relatively cheap. These are typically used for Grilling outside and so for home use, you may have to cut these in half and create tips, depending on how big your stove is.

Cooking Donair Kebabs
Once these are shaped. Place them onto a casserole dish which will act as a catch pan and hold the Kebabs up. Place into a preheated oven on broil with the rack 1 notch below the top-notch. Broil for about 10 minutes. Flipping them over every 2 – 3 minutes.
Sauces
These are quick and easy and can be served in a variety of ways with a Sauce of your choice.

Ingredients
- 1 lbs Ground Beef
- 90 g Lamb Fat - or Beef Suet
- 3 Tbl Donair Spice
Instructions
- Chop the lamb fat into very small pieces and freeze. Once Frozen, Process in the Processor a bit before adding in the Ground Beef and Donair Spice.
- Process about 1 minutes or so until a paste is created. Weigh the Meat out and divide that by four to create your Kebab portions.
- With wet hands, shape the meat unto the Skewers and make sure they are uniformly even. Then proceed to shape to desired shape.
- Place onto a Casserole Dish to act as a catch pan and to suspend the Kebabs up and broil on the second notch down from the top rack for about 10 minutes. Flipping them over every 2 -3 minutes.
